Say hello to 543 Laksa, a quaint coffee shop stall located in Bukit Panjang, serving up hearty bowls of Katong-style laksa by an ex-undertaker’s apprentice. It’s not the career switch that would come to mind instantly, but one that’s immensely successful because these steaming bowls of noodles sell out within three short hours.
There is only one dish on the menu at 543 Laksa, and it’s pretty easy to guess based on the stall’s name. Every bowl of Laksa (S$5, S$4.50 for senior citizens or for every Facebook share, and S$3.90 for Pioneer Generation) has rempah and prawn stock that is lovingly handmade daily.
Managed by a solo hawker, 543 Laksa only serves out an average of 50 to 75 bowls of noodles a day. Each serving is prepared with fragrant coconut milk instead of a cheaper creamer substitute, and comes without chilli for a fuller burst of flavour that would’ve otherwise been overwhelmed. The stall opens at 8.30am, but make sure you’ve planned your visit on a late-breakfast day, because it typically sells out by 11am.
Every serving comes with the perennial combination of prawns, tau pok, tau gey, hard boiled eggs, fish cake, and thick beehoon drenched in thick gravy. If you’re in the mood for something comforting to start your day on the good note you deserve, you’ll know where to find 543 Laksa.
