New in town: Stay Gold Flamingo, Amoy St — Chill brunch spot by day, trendy cocktail bar by night

We’ve seen to be seeing a bit of a paradoxical trend in the F&B scene as of late. While the pandemic means most people would want to keep onto their stable jobs, many new entrepreneurs have been jumping out of their old jobs and starting their own dream concepts—from wanton mee stalls to the newest dual-concept at Amoy Street, Stay Gold Flamingo.

Offering 2 distinct experiences, the concept of Stay Gold Flamingo is anchored by Stay Gold, a modern classic bar with a rock and roll attitude where the thirsty can enjoy themselves over good music and solid cocktails, while all-day café Flamingo offers guests light treats such as pastries and sandwiches. Both concepts serve alcohol.

If you’ve dabbled in cocktails and tipples of the like, you’d probably be familiar with some of the names associated with this fledgling establishment. Most notably, you have Jerrold Khoo on board, boasting an impressive CV as former head bartender at Jigger & Pony, the current No. 2 on Asia’s 50 Best Bars list.

Joining him at the helm of this ship is Bai JiaWei, another experienced bartender who hails from Employees Only—you can expect him to provide plenty of funky ideas and wacky pizzazz at Stay Gold Flamingo.

With their background, you’d expect a no-holds-barred shindig at Stay Gold Flamingo but that only starts after 5pm. In the day, you can chill and indulge in some comforting brunch fare including hearty Ham Sandwiches (S$14) and mega-sized Macarons (S$8).

But if you wanna get tipsy, head over to the back of the shop space after 5pm and you can your hands on some creative concoctions on their Nothing Gold Can Stay section. Some quirky twists Stay Gold Flamingo puts onto classics includes Intro to Absinthe (S$23), which mixes the potent spirit with interesting doses of earl grey and coconut. 

But if you’re a good kid who prefers the prim and proper, then get some of the elevated classics off the Stay Gold section, ranging from zesty Whisky Sours (SS$23) and hard-hitting Negronis (S$23) to the intriguingly herbaceous Last Word (S$23).
