If you always find your self looking for good places to get your unagi fix, fret no more as Xi Man—a brand new restaurant specialising in unagi—will officially be opening its doors on 16 November 2021.
The restaurant—located along Penang Road—will be helmed by Chef Ryosuke Deguchi, who is personally trained by a chef of a 3 Michelin-starred restaurant in Kyoto.
Serving only the freshest Japanese eels procured from Miyazaki, Japan, Xi Man will also be grilling the eels using the traditional Kansai method instead of the usual kanto method. Compared to the other cooking variations that are done in Singapore, the Japanese eels also have a firmer bite and lesser chance of turning mushy during the process when cooked using the kansai method.
Apart from menu mainstays like the Unseasoned Grilled Eel with Wasabi (S$70), they will also offer unique dishes such as Roasted Eel Wrapped in Rolled Omelette (S$24), Vinegared Eel and Cucumber (S$12), and Savoury Steamed Egg Custard with Grilled Eel (S$10).
To further elevate your dining experience, Xi Man also offers a 3-course set menu (half for S$58, full for S$95) that will consist of a Grilled Eel with Rice and a Platter of Three Seasonal Obanzai with a side of Eel Liver Soup.
To quote Ross Geller in FRIENDS, “Unagi is a total state of awareness”, and what more when they’re freshly flown from Japan, right?
