I’m a dedicated fan of Malaysia-style herbal bak kut teh and yet, I’m often faced with the dilemma of choosing between the dry or soup options, as both offer equally exquisite culinary experiences. Ge Bi Lao Wang Bak Kut Teh at 121 Geylang East Central has launched the perfect solution for that problem by launching a yuan yang bak kut teh hotpot (available by reservation only).

The concept of melding hotpot and bak kut teh in a single meal is an unprecedented and innovative culinary fusion. However, King and his co-partner, Hang, were inspired by their shared nostalgia for these childhood dishes.

Simultaneously, they aimed to craft a novel dining experience, leading them to embrace this imaginative concept.

The Bak Kut Teh Yuan Yang Hotpot starts at S$12.90 for its base price, and customers can add various ingredients like sliced beef, pork, lamb, mushrooms, tofu, and vegetables like you mai cai or lettuce.

The meats range from S$2.50 to S$3.50 each while the vegetables are at S$1.80 per portion.

For the dry version, the ingredients are stir-fried with dried cuttlefish, garlic and dried chilli for some extra umami notes and heat. It is then served in a claypot to impart a caramelised and smokey flavour.

The soup rendition features an aromatic and robust herbal broth made by simmering pork bones and a concoction of various herbs and spices. You’ll find tender, fall-off-the-bone pork ribs or pork belly.
