Running an F&B business in Singapore has its challenges. Besides the intense competition from other establishments, manpower, location, and of course, rent, are also critical factors that play a vital part. Fong Yuan Kee Hainanese Boneless Chicken Rice is a 1-month-old stall that opened at Timbre+ Hillview food court that’s located within the Central Manpower Base (CMPB) at 91 Hillview Link.

Fueled by their shared affection for food and a goal to bring authentic flavours to the local community, 2 friends, Allister, 45, and Kenneth, 37, opened the chicken rice stall together. “We grew up enjoying ji fan from hawker places around Singapore, and gradually realised that this humble dish holds so much warmth, comfort and nostalgia for many people,” they shared.

The 2 friends had numerous late-night conversations and even tested out several recipes before their plan came to fruition. Their goal is to serve hearty and honest chicken rice that’s made with meticulous care.

Allister and Kenneth take satisfaction in making everything themselves, which includes poaching the chicken, preparing the fragrant rice, and concocting their own chilli sauce. They added, “We not only want to preserve tradition, but also want our customers to experience a taste that feels like home.”

Prices start from S$5.50 for a plate of Chicken Rice (Breast Part) and S$6 for Chicken Thigh Rice. You can also savour a Half Chicken for S$20, pair it with a plate of Oyster Sauce Vegetable (S$4) and add a Braised Egg (S$1.20).

Business hasn’t been the best, as the public might not even realise the existence of this place. Thankfully, more and more nearby residents have started to take notice and are slowly visiting the food court. Timbre+ Hillview’s occupancy is currently only at 60 percent, with around 11 to 13 stalls in operation.
Keeping the business running over the past month as a two-person team might have its challenges, but the duo feels a sense of achievement when customers leave with a smile or even return with friends.
