Yes, the chef intricately scores hundreds of tiny cuts along and across the grain of the pork belly. This method not only causes the meat to curl and tenderises the fat, but it also maximises the surface area for charring. In fact, the way it’s cut makes it look like an exact replica of sotong.

From the very first bite, I was officially a fan. Crisp on the outside, juicy on the inside, the pork belly somehow managed to stay soft, with a texture more exciting than your usual cut. It was totally unique and impossible to ignore.

The Yangnyeom LA Galbi or marinated US prime bone-in short ribs didn’t disappoint. It had a multi-dimensional flavour profile, tender and delightfully beefy in taste.

Next up, the Nuruk Moksal (pork collar) is served with king oyster mushrooms and Korean chilli peppers. The meat is marinated in nuruk, a traditional Korean aging starter used to make drinks like makgeolli. Served thick, the entire surface of the meat is well-seared before it gets cut into bite sized pieces.

The pork was wonderfully moist and tender, with a subtle tangy, almost umami-like hint of flavour. On the side was myeolchi jeot, an anchovy-based dip that packed a savoury, umami kick with a comforting fermented soybean note that kept me going back for more.

Lastly, the Galmaegisal is a pork skirt that has been marinated and hand massaged for 30 minutes to soften the meat and to allow the flavours to be absorbed fully.

Even with minimal fat, the pork stayed juicy, and when teamed up with smoky grilled kimchi, it turned every ssam wrap into a little flavour bomb. If you think this set was just a meat parade… surprise! SEORAE JIB backs it up with sides that make every bite even more exciting.
