While Singaporeans aren’t doing anymore panic-buying, some of us might have too much instant noodles and other instant food stocked up at home. Previously, we came up with a homemade beef burger with a twist—the “buns” are made of instant noodles.

Here’s a quick and easy way to pack more cheesy goodness into your instant noodles meal—Cheesy Garlic Instant Noodles. I’ve opted to top the dish with some chopped chilli for a bit of heat, and even more cheese, though you can definitely swap it out for other garnishes you prefer.

It only takes 10 minutes, so it’s great for #stayhome lunch on a busy workday.


Ingredients

  • 3 tbsp butter
  • 2 cloves of garlic, chopped
  • 1 cup shredded cheese (I used cheddar, as that’s what I had in my fridge)
  • 3 packets instant noodles (seasonings discarded)
  • Olive oil
  • (Optional) Chopped chilli for garnish

Tools

  • Pot
  • Skillet OR Frying pan
  • Spatula

Recipe Preparation

Preparation time: 3 minutes; Cooking time: 7 minutes

Feeds three

  • Prepare ingredients beforehand for a smoother cooking process.
  • Chop garlic and chilli. Shred cheese.
  • Boil noodles till al dente, about 5 minutes. Save 1 cup of cooking water to loosen sauce later, if needed.
  • Drain noodles and toss with oil so they don’t stick.
  • Melt butter in a non-stick skillet over medium heat.
  • Add garlic and sauté until fragrant.
  • Add noodles and toss with butter. Stir in cheese.
  • Pour in about ½ cup noodle water to create a sauce. Gradually stir in more water if the sauce is too thick.
  • Garnish with chopped chilli before serving.

Change up the cheese used, and see if the flavour profile changes. I’d say that the more freshly shredded your cheese is, the better it’ll taste. It’s a simple dish after all, so it’s all the more important that you get your core ingredients right. And add more cheese, if you’re a cheese fiend like me.
