Nasi lemak is one of Singapore’s most timeless, most beloved dishes. Everyone has their contentious favourites, and every nasi lemak cook has their own unique renditions—that includes celebrity Chef Shen Tan.
Chef Shen Tan is perhaps best known for her stint helming her own HDB-based private dining experience, OwnselfMake Chef. The exclusive home-based omakase was home to many creative ideas born of her love for local and Southeast Asian flavours.
Some may not know this, but Chef Shen Tan’s first foray into the F&B scene was at Maxwell Food Centre, selling nasi lemak. She moved on from it to pursue other culinary endeavours, but she’s back to peddle nasi lemak at Newton Food Centre with OG Lemak, 11 years later.
As we mentioned before, each chef has their own unique method of cooking this hawker classic which they take great pride in. Chef Shen Tan’s own interpretation, the OG Lemak Set (S$7.90), involves steaming the rice twice for the fluffiest texture and marinating the chicken for 24 hours before being deep-fried to crispy perfection.
But that’s not all she has up her sleeve, there are a total of four sets to choose from OG Lemak’s menu, each mouth-watering in their own way. If you’re not one for fried chicken wings, you might be tempted by the silky rendang dishes instead. Available in beef or chicken, whichever you choose comes with the same medley of twice-steamed nasi lemak, fried egg, ikan bilis, sambal belachan, and sambal tumis.
You might decide based on your textural preferences—the Beef Rendang Set (S$9.90) comes with tender, saucy beef chunks while the Chicken Rendang Set’s (S$9.90) glistening chicken thigh might be what gets your mouth watering. Vegans don’t have to feel left out either with the Vegan Set (S$9.90) that’s loaded with a hearty collection of vegan-friendly items such as grilled eggplant, tempeh chips, and tau kwa.
