Simple Stay-home Recipes: Kid-Friendly Pepperoni Pizza Bites

Ever had trouble finding cooking ideas for picky eaters? Especially if you have young ones at home, it can be quite an ordeal. Well, one thing’s for sure—kids love pizza. Introducing the Pizza Pepperoni Bites—a cross between a bagel bite and a pizza muffin.

These are relatively simple to make, and only require five minutes of preparation time. Served alongside some marinara sauce, these Pizza Pepperoni Bites are sure to satisfy any pizza cravings you or your family might have. 

Furthermore, they are so small, it’s easy to just pop the whole treat in your mouth while binging on your favourite Netflix shows during this #Stayhome period. If you’re in the middle of a Zoom class and your tummy starts rumbling, these bite-sized snacks are sure to satisfy your hunger pangs without drawing too much attention to yourself. The same goes for online meetings!

Here’s how I made my Pizza Pepperoni Bites in 30 minutes. Get off your delivery apps and pick up your apron—you’re in for a tasty treat. 

Ingredients

  • ¾ cups of flour
  • ¾ tsp of baking powder
  • 1 tsp of Italian seasoning (I substituted this with Tuscan seasoning)
  • ¼ tsp of crushed red pepper 
  • ¼ tsp of salt
  • ¾ cup of milk
  • 1 egg (lightly beaten)
  • ½ cup mozzarella cheese
  • ½ cup parmesan cheese
  • Pepperoni slices (to your preference)
  • Marinara sauce (optional)

Tools

  • Mini muffin pan (feel free to use a normal muffin pan if you don’t have the mini version)
  • Large mixing bowl
  • Whisk
  • Spoon (to scoop the batter into the muffin pan)

Recipe Preparation

Preparation time: 10 minutes; Cooking time: 15 minutes

Feeds two to three

  • Preheat the oven to 200°C.
  • Cut up the pepperoni slices into quarters. This is so that they can fit nicely in the mini muffin pan. 
  • Prepare all your ingredients beforehand for a smoother cooking experience. 
  • Mix the milk and eggs. 
  • In a separate bowl, mix the flour, baking powder, salt, Italian seasoning (I used Tuscan seasoning), and crushed red pepper. 
  • Combine the wet and dry ingredients and use whisk to mix. 
  • Add in the cheese and sliced pepperoni. Continue whisking until all ingredients are mixed well. 
  • Scoop the batter into the muffin pan. You want to be sure not to fill the holes to the brim because the baking powder will increase the volume of the batter as it bakes. 
  • Pop them in the oven for 15 minutes or until browned. 
  • Plate your Pepperoni Pizza Bites and garnish with parsley if you wish. 
  • Serve it alongside some marinara sauce. 

Recipe (In Pictures)

Step 1: Preheat the oven to 200°C

Step 2: Cut the pepperoni slices into quarters. You’re free to leave them as whole pieces or cut them into halves, but I find that cutting them into quarters lets them sit perfectly in the mini muffin mould.

Step 3: Prepare all of your ingredients separately beforehand to ensure a smoother cooking experience.

Step 4: Mix the milk and eggs together in a bowl. I made sure not to form excessive bubbles in case it affected the texture of the Pepperoni Pizza Bites overall.

Step 5: Mix the flour, baking powder, salt, Italian seasoning, and crushed red peppers together in a separate bowl. 

Because of the ‘Circuit Breaker’ measures, more people have been cooking their own meals at home and it was tough for me to find Italian seasoning in stores. I used Tuscan seasoning instead because it was a close substitute.

Step 6: Combine the wet and dry ingredients in a large mixing bowl and whisk.  

Step 7: Add the sliced pepperoni and cheese into the mix and continue whisking until everything is mixed in well.

Step 8: Scoop the batter into the muffin pan. Be sure not to fill the hole of the mould to the brim because the baking soda will cause the Pepperoni Pizza Bites to rise in the oven. You can also choose to add extra pepperoni slices on your batter once it’s set in the mould.

Step 9: Pop them into the oven and bake for 15 minutes, or until browned. 

Step 10: Plate your Pepperoni Pizza Bites and garnish with parsley if you wish. 

Step 11: Serve your bite-sized delights alongside some marinara sauce for dipping.

There you have it—perfect golden-brown Pepperoni Pizza Bites, warm and ready to eat. I noticed the strong, ambrosial scent of the Tuscan seasoning while they were still baking in the oven, and I must say, it really got my mouth watering! 

You might want to invest in a bottle of pre-made marinara sauce to go with this savoury snack because trust me, it made a world of a difference. I loved how the exterior of the treat was slightly crispy and tasted of toasted cheese, while the inside was chewy. Not compromising on the texture of pizza crust, this dish elevated it by mixing melted cheese in and bringing the main components of a pizza slice together into a single bite.

Much less of a hassle now, isn’t it? You’re welcome to switch up the ingredients and substitute with other common pizza toppings like chicken ham, turkey bacon and bell peppers. You can even top it off with pineapple, if that’s what you’re into.
