New in town: Seroja — A multi-course tribute inspired by the Malay Archipelago

It’s not often that we see the rich diversity of cultures and culinary traditions of the Malay Archipelago translated successfully into a dining experience. Seroja is a tribute to the region’s flavours and medley of cultures. It will launch on 1 Oct 2022 at Duo Galleria.

Helming the new restaurant will be Chef Wong, who has cooked for three Michelin-starred Coi Restaurant in San Francisco. He also clinched a spot in the top three in the S.Pellegrino Young Chef Academy Competition in 2021, which was held in Milan. 

Chef Wong opened Seroja to share the disparate cultures from the Malay Archipelago region, with the aim of capturing this harmony on a plate for all to appreciate. 

Seroja - HOKKAIDO SCALLOP

Seroja launches with a multi-course Nusantara Menu (S$268++), which is a homage to the islands of the Malay Archipelago. This course focuses on familiar flavours from the spices and herbs native to the region.

An example would be the Hokkaido Scallop, which is slow-cooked in garlic oil alongside a trio of sauces made with ingredients from the region such as torch ginger flowers, tamarind with palm sugar and lily bulbs.

Seroja also pays homage to how people in the region eat, with rice accompanying proteins and greens. The Traders Rice is the last savoury course on the menu, featuring barbecued percik-marinated beef short ribs, nasi dagang that is made with red rice harvested by the orang asli in the mountains of Borneo. 

It is complemented with pickled chayote from the Cameron Highlands with fish sauces, and locally grown vegetables with coconut milk and belachan
