When we hear of Tolido’s Espresso Nook, two things come to mind immediately. Its impressive brunch items and snaking queue. It has come a long way from its roots as a small snack store in the canteen of the Science Centre’s Omni-theatre back in 2008, to a hot favourite in Singapore’s café scene today.
Celebrated for their local fusion numbers done right, the 462 Laksa Pasta and Pandan Pancakes are often at the top of the list for eager patrons. To express your admiration for mum this Mother’s Day, why not brave the potential queue and treat her to Tolido’s grub? This May, they have gallantly trooped into the realm of mentaiko, also known as salted cod roe—an adoration nationwide.
If you’re expecting yet another mentaiko pasta or fries to appear on the menu, thankfully, we can tell you otherwise. Their newly dropped Mentaiko Mayhem consists of two dishes, which we hope will indeed cause some delicious havoc and do the ingredient justice. This ingredient, a buzzword in the café scene, may just be beginning to fall on the overrated plane.
With Tolido’s culinary magic, we’re anticipating their foray in upgrading the comforting and cheesy staple, Mentaiko Mac and Cheese. It features a baked cheese crust with a well-balanced charred action, with a generous dollop of mentaiko and tobiko. Six of their Mentaiko Baked Mussels rest gracefully on a plate, livening it up with its vibrant salmon-pink and bright orange colours, with streaks of charred goodness.
The only form of mayhem you should give mum is Mentaiko Mayhem, so head to Tolido’s for a cosy celebration, between 1 to 31 May 2021 before it vanishes from the menu.
