Muffins are one of my favourite teatime snacks. With different flavours and toppings, there’re just so many variations of them. But have you ever come across a muffin with bak kwa toppings?
The folks over at Spinelli Coffee Company have just created yet another local-inspired item. Following their scrumptious Nasi Lemak Wrap from a while back, they’ve just dropped an all-new Chicken Bak Kwa Muffin (S$3.80)!
They’ve taken the classic baked item and combined it with one of Singaporean’s all-time favourite snacks, Bak Kwa.
If you’re wondering, Spinelli Coffee Company mixes actual bits of bak kwa into the muffin batter. You can actually find juicy pieces of bak kwa within the muffin.
Subtly sweet and savoury, the bak kwa had a decent bite.
They’ve also topped the muffin with even more bak kwa bits. Every bite I took had a fair amount of bak kwa in it.
Unfortunately, however, the muffin itself failed to rise to the occasion. Almost as dry as sand and crumbly, the muffin wasn’t very enjoyable.
It didn’t help very much that the batter could have been more sweet, to balance out the savouriness of the bak kwa.
It’s a thoughtful creation, I’ll give them that. But when it comes to the basic muffins, I reckon there’s a huge room for improvement.
