This National Day 2020, Swee Choon pulls out all the stops with their special Mee Suah Kueh With Chilli Crab Sauce (S$5 for two pieces) and Lava Bun With Chilli Crab Filling (S$8 for three pieces). These specials incorporate the iconically Singaporean chilli crab flavours with two of their most popular dishes, the Mee Suah Kueh and Lava Bun.

I’ve been hankering for dim sum lately, and the Swee Choon chilli crab specials made it all the more satisfying.

The Mee Suah Kueh with Chilli Crab Sauce involves a drawn-out process of stir-frying wheat vermicelli with dried shrimps and Chinese sausage to make the mee suah. The mixture is then set in moulds to form the kueh that is deep-fried to a delicious golden brown.

The kueh comes with a generous heap of chilli crab sauce drizzled over it. It’s a flavourful blend of homemade chilli crab paste and chunks of freshly peeled crab meat. Enjoy the Mee Suah Kueh with Chilli Crab Sauce as the spicy-sweet sauce soaks the crispy, soft kueh with vermicelli still visible inside the crust.

Meanwhile, the Lava Bun with Chilli Crab Filling is inspired by the fried mantous (buns) that chilli crab is often eaten with, and their similarity with Swee Choon’s Liu Sha Bao (lava bun).

Instead of the usual custard oozing out of this pastry, expect a hot chilli sauce surrounding fresh chunks of crab meat. The bun, fried to a perfect golden brown, boasts a delicious crust around a soft and cottony interior. Eat this when it’s piping hot.
