As the title suggests, this episode of Tapau Please touches on what makes up taste and preference for certain foods. Inspired by The Ezra Klein Show‘s episode where Klein sits down with Mark Bittman, they both go deep into the construct of taste, the unseen costs of food manufacturing, and the differing views of how food is perceived.

Mark Bittman is an author and a columnist for The New York Times. He spearheads ‘The Minimalist’ column as well as has a celebrated collection of books to his name, such as ‘The Minimalist Cooks at Home’ and ‘How to Cook Everything’. On Ezra Klein’s podcast episode, the dive into the conversation of the purpose of food (nourish vs. emotional pleasure) and the ‘externalities’ of food production which the consumer doesn’t necessarily pay for with their dollar (i.e. environmental impact).

With technology so advanced today, it’s also a bewildering reality that it hasn’t yet empowered the consumer to create healthier meals at home, resulting in a heavy dependence on the food industry to produce healthy food for us. But at what cost? There’s still so much extra gunk added to the growing of cattle and vegetables, and yet, here we are as an urbanised population still struggling to find ways for homeowners to grow their own produce.

There’s also the discussion of taste and how it’s developed in a person. Our co-hosts touch on how nostalgia impacts the palate just as much as daily rituals—and even how your income can affect what you have a penchant for.
