Nestled within the luxurious Holiday Inn Singapore Atrium in the heart of Havelock, Xin Cuisine Chinese Restaurant has long been a go-to for elevated Cantonese delicacies and handcrafted dim sum.

This exquisite launch only adds to the award-winning restaurant’s allure. Meticulously curated by Executive Chinese Chef Kwan Yiu Kan, it seeks to celebrate the rustic yet elegant flavours of Shunde cuisine — often hailed as the “Michelin of traditional Cantonese cooking” for its delicate techniques and deep respect for ingredients.

Xin Cuisine’s Shunde Classic Menu offers a sophisticated spread of 6 dishes, spanning seafood, meat and dessert.

Kick things off with the Stir-Fried River Prawns with Delicate Egg White and Milk Beurre Blanc (S$36 per portion), which features fresh river prawns swathed in a velvety sauce of egg white and milk. Alternatively, get the Crisp-Fried Fish Mousse with Prawns in Superior Stock Reduction (S$38 per portion), a hearty pot brimming with handmade fish mousse and prawns, all bathed in a golden collagen-rich broth.

If you’re not big on seafood, opt for Braised Duck and Taro in Plum Sauce Jus (S$36 per portion) — a Canton staple of tender, juicy duck and earthy taro slices balanced by a sweet-savoury plum sauce.

Feeling adventurous? Go for the Deep-Fried Sliced Eel with Salt and Pepper (S$38 per portion), a punchy plate of crispy eel fried and seasoned to wok-kissed perfection.

Finally, round out your meal on a sweet note with some Ginger Milk Curd (S$9.80 per portion), a delicate, jiggly dessert with a gentle kick of ginger.

Admit it: these dishes are calling your name. But remember, the menu’s only here for a limited time. So… will you be catching this flight to Shunde?
