Available in three flavours, take your pick from the Mango Sticky Rice SouffléThai Milk Tea Soufflé, and the Mix Berries Citrus Soufflé.

I’m particularly interested in how mango sticky rice tastes in soufflé pancake form. I imagine it’d be a nice combination of sweet and sour from the mango, balanced with a generous drizzle of coconut milk.

Japanese soufflé pancakes are tall, wobbly and airy pancakes. Their egg whites are beaten into light meringues, incorporating a lot of air into the batter. As a result, the pancake gets a great deal of volume and height.

When cooked, the pancakes have a golden brown and slightly crispy exterior. Cutting into them feels like you’re slicing into a cloud as it deflates a little.

Some places make soufflé pancakes that are still a little creamy on the inside, resulting in a more wobbly structure. Others are cooked through more thoroughly, creating a drier and airier texture. Some are even cooked in moulds for a more structured shape.
