First dibs: Musette — Bicycle-friendly cafe with pandan souffle pancakes and kaya butter cakes

If you’re an avid cyclist, it’s time to ride down to Redhill for a brunch break. Musette is a new cafe that opened in Thye Hong Centre on 29 July 2022, serving Western and Asian brunch dishes and coffee.

Musette brands itself as a meeting place for friends of cyclists. The spacious cafe is bicycle-friendly, and even uses bicycles to decorate the space. With a rustic and minimalistic feel, the atmosphere of the cafe was very comforting.

Musette serves all-day breakfast dishes, including a Breakfast Sando (S$19++), filled with smoked bacon, cheddar cheese, scrambled egg and chipotle sauce, and Otah Toast (S$19++), which comes with sourdough, Japanese cucumber, otah, a sous vide egg, coriander lime hollandaise and mixed greens.

Don’t forget their chef’s signature Pandan Souffle (S$22++), which is served with pandan souffle pancakes, sea salt gula melaka, homemade kaya, coconut ice-cream and toasted bread powder!

From 11am onwards, dig into Musette’s mains, like their Beef Burger (S$26++), Chicken Burger (S$23++), Seafood Arrabbiata (S$26++), Mushroom Orzo Pasta (S$22++) and Chicken Pesto Pasta (S$20++).

I tried the Mushroom Orzo Pasta and was absolutely blown away by the richness of the dish. The sous vide egg and parmesan made the orzo pasta extra creamy, and the flavours were outstanding. The pieces of fried kale were crispy and delicious too. Despite the relatively simple appearance of the Mushroom Orzo Pasta, its flavours were top-notch.

Musette also offers sides for a quick bite. Choose from Calamari (S$15++), Chipotle Cheese Fries (S$14++), Sausage Platter (S$20++), Tater Tots (S$12++) and Dirty Tater Tots (S$12++).

The Dirty Tater Tots came topped with sambal mayo, preserved radish and chicken floss. The tater tots were crispy and I loved the generosity of the toppings, which gave it a savoury touch. Despite having preserved radish, the dish wasn’t too salty and made for a great appetiser.

Musette also has an in-house bakery named Kōbō by Melissa, with bakes created using Japanese techniques. The cakes available are Kaya Butter (S$8++), Strawberry Shortcake (S$9++), Tiramisu (S$9++), Yuzu Cheesecake (S$10++) and Blackforest (S$11.50).

The Kaya Butter cake came with house-made kaya and French butter cubes within a Japanese sponge cake. The cake was soft and fluffy, while the kaya was incredibly aromatic. The roll as a whole was not too sweet. However, I would have preferred for the block of butter within the cake to be spread more evenly throughout the roll.

Overall, I had a fantastic meal at Musette. The dishes were delicious and the atmosphere was lovely. Even as a non-cyclist, I enjoyed my time dining there!
