The first ever Singapore bar guided and collaborated with a ‘celebrity mixlogist’  Javier de las Muelas, opens in Four Seasons Hotel as One-Ninety Bar. Javier de las Muelas is considered a benchmark in cocktail mixing.

He is most well-known for the award winning Dry Martini Bar in Barcelona, as well as owns and manages other bars in ​​Madrid, San Sebastian, Aiguablava, Palma de Mallorca, Arties, Bali and now Singapore.

The philosophy is to create unique experiences, with genuine products with care and tenderness to each gastronomic cocktail.

From hand-crafted cocktails to the finest Scotch or a simple glass of wine – the One-ninety Bar concept was born from a desire to create a game-changing bar to quench patrons’ thirst and beckon them to enjoy another round.

Javier De Las Muelas also brings with him his signature DROPLETS essence, using natural ingredients and a whole 3 years to perfect and formulate. Ideal for mixing with cocktails for that extra infused flavours.

Negroni with Mediterranean Rosemary DROPLETS. Gin, vermouth, Campari. I found this classic cocktail a tad too bitter from the Campari, but you can definitely taste the rosemary herbs throughout.

Smoked Berries Cocktail. This drink was made with the Oak Smoke DROPLETS, mixed berries and vodka- very pleasant to enjoy. Refreshing with that smoky aftertaste and zest to cut through the sweetness.

Ipanema one-ninety mocktail

Ipaname mocktail. Pineapple, passion fruit, mandarin syrup, compote and lime cordial. Also a very pleasant, easy drink that is non-alcoholic. Perfect for the beach or pool side.

Dry Martini.  Javier de las Muelas has the teaching that utmost respect has to be shown to this cocktail, dubbed the king of cocktails. After stirring this simple gin and vermouth mixture, the bartenders at One-ninety will place the martini on a tray and the bartender is no longer allowed to touch the glass. Only the guest is allowed to accept and carry it off the tray to enjoy.

Honestly a pretty average martini and nothing too spectacular (I’m high-maintenance for my cocktails). Bombay Sapphire Gin and Martini Vermouth in this mix, but carefully stirred (not shaken), strained and constructed with an olive. They do use very pure, high quality water for the ice though.

The cocktails are not out-of-this-world in my opinion, and strangely I found the mocktail to be most impressive. DROPLETS are currently only available in the bar as part of the cocktails.

Along with a nice outdoor Terraza, One-ninety bar has soothing, sleek ambiance to chill and relax for casual conversations or even high-level business discussions. Service is also excellent here, as expected of Four Seasons Hotel.
