No, the establishment has nothing to do with Captain Jack Sparrow. The Black Pearl gets its name from the beauty and exquisiteness of a pearl and is inspired by the Qing Imperial Banquet. Helmed by award-winning Executive Chef Dee Chan, it boasts fare with the flavours of authentic “Yue” Cuisine from various regions in Greater Canton with a modern twist.

The Ala Carte Menu consists of a luxurious selection of dishes from Cantonese sub-cuisines. For instance, the Black Pearl Signature Pork Knuckle Jelly (S$26++) has Teochew roots and is inspired by traditional vinegar pig trotters. On the other hand, the Smoked Braised Goose with Sugar Cane (S$98++ for half) is influenced by the flavours of Guangdong.

Executive Chef Dee Chan’s original creation, Otah Mousse in Cones (S$9++) deviates from the Chinese theme, and instead takes inspiration from the Southeast Asian fish cake.

Hong Kong Dim Sum, from S$9++ to S$18++ per serving, will be available daily. This selection includes dishes such as Truffle Wild Mushroom Dumplings and Quail Egg Spinach Siew Mai. Hong Kong pastry-inspired treats like Charcoal Crust Duck Meat Bao, based on the iconic buo lo bao, and the buttery Bird’s Nest Egg Tart are also available.
