The Dragon Boat Festival might have ended this year, but OosterBay Singapore has come up with something special that just might tempt you.

To celebrate our nation’s 55th birthday, OosterBay is releasing an all-new Uni Bak Zhang (S$19.90 for 3pcs). Intrigued yet?

Made with sushi rice and filled with uni, ikura, tobiko and crabmeat, this isn’t your traditional bak zhang, but it’s tasty all the same. Purists might not consider it actual rice dumpling but you can take it as a cross between onigiri and bak zhang then.

I managed to get ahold of some to try (thank you OosterBay!), so let me tell you what to expect.

Traditional bak zhang tends to be heftier, but the Uni Bak Zhang from OosterBay was dainty enough to fit snugly in my palm. Since it’s bite-sized, I really had to exercise some self-control so that I didn’t gobble all three pieces up by myself.

What I really appreciated about OosterBay’s take on bak zhang is how it was familiar, yet strikingly new.

The sticky sushi rice reminded me of the usual glutinous rice in bak zhang, though each grain was more distinct and it was a lot lighter on the palate. It held a faint fragrance from the vibrant green pandan leaves wrapped around the rice, further adding to its refreshing quality.

Creamy uni, pops of briny flavour from the tobiko and ikura, and clean-tasting sweet crabmeat made up the filling of this “bak zhang. It wasn’t overwhelming even though there were plenty of seafood elements, and I could happily polish off another one or two.

If you want to elevate your experience even further, you can even get some caviar to accompany your “bak zhang”. OosterBay offers caviar of different grades and quantities, from Polanco Siberian Reserve (S$80/30g, S$129/50g) to Polanco Oscietra (S$109/30g, S$182/50g).

This is definitely a different take on the usual bak zhang, and if you’re not too much of a purist, you should give it a try. You can get it delivered to your doorstep, or you can also head over to their restaurant Uni Gallery for a sit-down meal.
