Tucked away in the low-key hawker centre that is West Coast Market Square, Xin Xin Famous Fried Oyster only sells one thing – Oyster Omelette, priced at S$3, $4 and $5 for small, medium and large sizes respectively.

The stall has been dishing out orh luak the old-school way for the better part of 40 years. The owner starts off by seasoning eggs with some pepper and vigorously beating it in a tin can. The eggs are then poured onto a heated pan and fried together with a batter of tapioca starch.

Fresh oysters portioned according to the size you order are then added and stir-fried together with the mix. Even for the S$3 portion, you’ll get a decent helping of these juicy oysters.

The finished product is an omelette with equal parts crispy-edged eggs and gooey, chewy tapioca. It is then topped off with spring onions and served with a saucer of their tangy house-made chilli, a perfect complement to the briny oysters and savoury egg.
