If you’re looking for an excuse to travel to Woodlands first thing in 2024, there’s the opening of Adura’s. The first day of business will be on 5 Jan

Adura’s was born as a combination of several factors. A prominent one was the founder, Mrs Saras’s love of the diverse biryani flavours across Asia. The stall’s name is a sentimental touch from Mrs Saras as it’s her childhood nickname. 

Another was being inspired by her husband’s culinary expertise as he manages Mr Vadai @ Haig Road. Mrs Saras, being a chef in her own right, wanted to express her love and give unique biryani experiences by opening her own stall.

With that, let’s start with the biryani on the menu. Adura’s Pottalam Briyani is an artful creation where the dish is steamed and wrapped in a banana leaf. It comes in 6 variations. There’s Egg (S$7.50), Chicken (S$8.50), Veg (S$8), Fish (S$9), Mutton (S$10) and Prawn (S$11).

Another menu item has roots in KL, Penang and India. Mrs Saras has innovated her very own recipe of the Kizhi Prata (S$4), offering a personal touch to it. Mrs Saras calls this dish “an experience that invites you to savour the rich tapestry of tastes”.

At the base, a piece of prata with various toppings is placed on a banana leaf. It’s then covered with another layer of prata, then soaked, steamed, and tied in a banana leaf. Fair warning if you’re not expecting it, but it’s going to be quite drippy.

Adura’s offers variations of Kizhi Prata in chicken, fish, and mutton gravy. It also has additional options in chicken meat, mutton meat, egg omelette and quail eggs.

If you’re not that adventurous yet, Adura’s also has local favourites like Nasi Padang (S$3.50) and a variety of authentic Indian favourites.
