Head Pastry Chef of Alice Boulangerie launches Instagrammable 3D avant-garde dessert series

Those who are familiar with Alice Boulangerie know that their brand mascot is that of a cute-looking squirrel, which is known for personifying curiosity and adventure. Head pastry chef of Alice Boulangerie, Stanley Lay, has now created a 3D avant-garde series of entremets (desserts) that display his creativity and culinary finesse. And this has got us all excited!

Let us take a look at these awesome looking desserts that are perfect for the ‘gram.

What does a squirrel love to eat? Automatically we think of acorns! The Acorn (S$13+) is encrusted with a handmade chocolate acorn shell made with 70% dark chocolate and reveals layers of chocolate mousse, yuzu crémeux, almond dacquoise, and almond walnut praline with salted caramel mousse within. What a refreshing and decadent combination.

The Mushroom (S$9+) is made of classic choux puff (usually used for cream puffs and eclairs) which is piped with smooth gula melaka chantilly cream and coconut pastry cream complemented with gula melaka caramel.

Decked out in cheerful shades of light green and yellow, the Summer Cheese (S$10+) is a special harmonious mix of calamansi crémeux with lime jelly and pistachio dacquoise, sheathed beneath a beautiful layer of lime cream cheese, and mascarpone mousse.

Last but not least, The Cocoa Ananas (S$10+) is a combination of Manjari (64% chocolate) chocolate mousse, flourless chocolate sponge, salted crumble base, and pecan brownie paired with an uplifting pineapple compote. White chocolate shards are artfully fanned out around the entremet which resembles pineapple rings.

These 3D avant-garde desserts are now available for purchase in-store and with online pre-orders. Get your hands on them, quickly!
