I remember those Sunday morning trips to Chinatown with my grandpa to grab breakfast where we would always order chee cheong fun, which made me a fun fan for life. I’m always on the hunt for my next favourite and it’s become harder and harder to find freshly-made chee cheong fun at hawker centres these days.

So it sparked some excitement when I heard of Chef Wei HK Cheong Fun, a newly-opened stall at a coffee shop in Bedok Town Centre, which offers restaurant-quality chee cheong fun at hawker prices.

The man behind the stall is Chef Thoo Chang Wei a veteran chef who has honed his craft as dim sum chef for over two decades at various restaurants from a young age of just 18. That screams dedication to me, which can only mean quality chee cheong fun.

His last stint as a dim sum chef was at Peach Garden before he decided to forge out on his own during the COVID-19 Pandemic, and hence Chef Wei HK Cheong Fun was born. At his new home, Chef Wei serves freshly made Hong Kong-style cheong fun at affordable prices. The menu includes four types of cheong fun to choose from—Plain Cheong Fun (S$3), Char Siew Cheong Fun (S$4), Mushroom Cheong Fun (S$4), and Prawn Cheong Fun (S$5).

To ensure the best quality chee cheong fun, every component of the classic dish is prepared on-site daily at Chef Wei HK Cheong Fun. From the velvety rice noodle sheets to the sauce, you can be sure that you are receiving the freshest ingredients made with time-tested techniques by a dim sum chef.

The most unique of all has to be the Mushroom Cheong Fun that’s a secret recipe passed down from the Chef’s master. It’s made from a combination of shiitake and shimeji stirred in butter and oyster sauce to bring out the earthy fragrance of the fungi. Also, there’s a not-so-subtle hint on their Facebook page, that they’re planning to open a second outlet at Clementi Blk 352 on 7 September 2021 (psst, don’t say we never say).
