New in town: Dopo Teatro, Esplanade — Japanese Italian hand-stretched pizzas by the bay

With a namesake that translates to “After theatre” in Italian, there is nowhere else to relish in quaint Italian fare than the Theatres By The Bay. Dopo Teatro opened its doors to diners and dwellers of the Esplanade on 21 June 2021, with offerings of an innovated menu from their Italian roots.

An all-encompassing menu awaits you, with a symphony of modern and classic dishes, from antipasti, soups and salads, to house made pastas and hand stretched pizzas. The star of the show has got to be their pizzas, though. All handmade from scratch, it boasts a dough fermented for 36 hours and baked at 320 degrees, for the perfect taste and texture.

By now, fusion pizzas are no longer common, but Dopo Teatro’s fare nonetheless sounds exciting, while retaining sincerity. With Japanese ingredients on a very traditional Italian pizza, they may just elevate the standing of fusion food in Singapore’s culinary scene. Ika Sumi (S$28), a squid ink pizza boasts fine and fresh crustacean ingredients like ocean prawns, ika (squid), asari clams and more. For specials, the Verde (S$24) is a savoury delight, with mortadella, pistachio crème and bocconcini making up the pizza of meat and cheese lovers’ dreams. The Unagi (S$26) pizza is also all sorts of appetising. We’re talking about some glorious unagi, mozzarella, kebayaki drizzle and mayo and of course, shaved bonito as the cherry on top. They’re not playing around with their pizzas, and it’s very clear.

Their sharing platters are stunning as well, and the Dopo Teatro Signature Charcuterie Piatti (S$65) is a grand affair that mustn’t be missed when families of more than 2 pax can sit together again. With the chef’s choice of Italian cold cuts and artisanal cheeses, it’s a hearty combination that can’t go wrong. If you’re up for some pasta, Beef Bolognese Classica (S$18) and Seafood Paccheri (S$25) are just some of the lot that would satiate both your palate and heart. We know full well that carbs are delightful comfort food, their pasta dishes are amplified and made into theatrical brilliance here.

To celebrate their opening, they have a generous 20% of all ala carte dishes, for only a limited time, the chef’s kiss to a great date night.

After all, all the world’s a stage, and on the culinary grandstand, Dopo Teatro’s take on traditional Italian nosh is another play worth of a watch.
