1. FORT by Maison Ikkoku
FORT by Maison Ikkuko is an exquisite cocktail and dining restaurant located at the (now defunct) Singapore Pinacotheque De Paris, situated beside the Battlebox office at Fort Canning.
It is furnished with a mix of alluring classy deco juxtaposed against a hardy industrial interior, which aptly exudes the heritage of Fort Canning Hill.
While Maison Ikkuko is home to a range of bespoke cocktails that are not seen on their menu, at FORT, guests can be treated to a full spectrum of culinary and cocktail pairing experience created by Senior master mixologist and executive chef Ethan Leslie Leong.
Sous Vide Salmon with Passionfruit (S$38++). Be blown away by this perfectly cooked, pink in the middle salmon. While the salmon roe adds a robust oceanic flavour to the fish, the passionfruit balances the dish out with its citrusy tang and sweetness.
Spicy Maguro Handroll, The Fort (S$18 for four pieces/S$28 for eight pieces). Prettily adorned with edible flowers and onion sprouts, the handroll packs a burst of flavours from the heat and freshness of the ingredients.
The pillow soft rice, velvety smooth spicy maguro and crunchy cucumber create a delightful play of textures in your mouth. You can get all these a la carte dishes at 15% off the total bill!

2. Ishinomaki Grill & Sake
Ishinomaki Grill & Sake is furnished in the style of a Japanese fishing village, which will transport you into a fishing boat cabin with fishing tools decorating the cemented walls of the restaurant.
Instead of using pre-ordered ingredients, Ishinomaki Grill & Sake imports a special “Black Box” from Japan’s renowned fishing ports to create the dishes in their menu.
Chefs would only know what’s in the box every morning when it arrives at the restaurant, making every visit a new dining experience.
The Yakitori Chicken Skewer (S$3), Tsukune Minced Chicken Balls in Skewer (S$3), Yaki Onigiri Grilled Rice Ball (S$4) and Shiitake Grilled Mushrooms (S$6), are all great starters and small bites before a hearty meal.
There are up to 35 different skewers to choose from the menu from meat, to vegetables and seafood that will delight everyone.
Sashimi & Unagi Seiro Ozen (S$34). Tuck into a comforting meal of grilled eel served atop a bed of steamed rice in a wooden box. The meal comes with an assortment of sashimi flown in from Japan.

3. Tenkaichi Japanese BBQ
Tenkaichi is helmed by Mr Naing Ye Guang, who is also a head chef of the restaurant. The restaurant prides itself in specialising in offering premium Wagyu Beef Yakiniku in Singapore.
Wagyu Beef Yukke (S$15.90). Seasoned with soy and topped with a raw egg yolk, the ground wagyu was surprisingly addictive. Mix it up altogether for a slippery mouthful of salty richness.
Waygu Karubi (S$19.90). The Japan beef short rib had a marbling score of 7+ (AUS). It melts right in the mouth and has a rich buttery flavour. Watching the fat sizzle on the grill will make your stomach rumble in protest from the wait.
Each table comes with a grill ready to be fired up, you’ll get to play chef and barbecue meats to your preference. 4. The Flying Squirrel (TFS) Private Works
A spin-off from The Flying Squirrel (TFS), TFS Private Works focuses on Omakase-styled dining and Japanese-inspired tapas, while staying true to its roots by serving up fresh food and rendering good service.
A long marble table spans across the restaurant, making it a chic and friendly atmosphere for small gatherings of 20 to 30 people, where you can relish in quality food and long hours of conversations.
Omakase Sushi Platter (S$88). For a lighter meal, opt for a sushi platter featuring seasonal catches from quality imports. It comes with five different assortments to indulge in, while not being completely filled up.

5. Chabuton
Chabuton is home to scrumptious ramen recipes created by Chef Yasuji Morizumi, the ‘king of ramen’ and world’s first Michelin-starred ramen chef.
Every bowl of ramen is made from ingredients imported from Japan or specially sourced products by companies appointed by the Japanese headquarter team.
While the interior and furnishing are kept simple, the unpretentious restaurant sees many satisfied customers slurping up the entire bowl of ramen, right down to its last drop of broth.
Chabuton Tonkotsu Ramen (junior portion: S$8.30, regular portion: S$11.90). A signature dish of Chabuton, the rich broth is only made achievable by simmering pork bones over many hours.
Filled with collagen, the soup leaves behind a creamy texture in your mouth, and is served with a slice of char siew, Japanese leek and white sesame to enhance its flavour.
The Chabuton Kara Kara Ramen (S$12.90) is made with pork bone soup and packs a punch of heat with its spoonful of spicy minced pork.

6. Yakitori Hibiki Lounge
Mr. Hibiki, the founder of Hibiki Company is the “Yakitori Association” Chairman and is known for being a Yakitori ambassador.
The company has opened a Yakitori theme park showcasing skewers from different prefectures, and is now on a mission to provide Singapore with an authentic Japanese dining experience.
Yakitori Platter ($23 for 5 pieces, $40 for 10 pieces). Yakitori has a long history in Japan and is considered a traditional Japanese food. Yakitori Hibiki Lounge adds on to the culture with its special miso barbecue sauce, which are exported all around the world.
