Craving something spicy this Christmas? Holiday Inn Singapore Atrium‘s executive chef, Chua Yew Hock, invented a new Singapore-inspired turkey: an assam turkey, perfect for all you chilli lovers.
Marinated with gingerflower and tamarind, the Whole Assam Turkey (S$128) is a juicy concoction that’s bound to tantalise your taste buds.
Slightly sour, tangy with a hint of heat, the turkey is served together with achar and spicy gravy, which is one of my personal favourite sauces so far. The spicy gravy reminds me of chicken rice chilli, but richer with a stronger hint of lime and citrus, and a good pack of heat to make you sweat.
To balance out the heat from the assam turkey, its Yuletide Christmas Package (S$278) comes together with a Granny Smiths and Coconut Yule Log Cake (S$78). Though creamy, this log cake was light and slightly tart from the apples, and was a great way to end the Christmas feast.
Indulge in an enticing array of festive takeaways from Café Noël at Fairmont Singapore & Swissôtel The Stamford, which has almost everything to cater to even the fussiest eater.

Famed for its yummy Peranakan and Asian-inspired dishes, Swissotel Merchant Court’s Ellenborough Market Cafe is presenting an Asian-inspired Turkey with Cranberry and “Kam Heong” sauce (S$182) for the festive season.
“Kam Heong” sauce is a golden gravy made with dried shrimp, curry powder, shallots and garlic. Thick and luscious, this gravy was super fragrant with a slight tinge of heat and reminded me of a combination between satay and curry sauce. I loved dipping my turkey meat in this sauce because it made each bite extra tantalising and yummy.
If you’re trying to find sharing platters or appetisers for the whole family, be sure to get its Smoked Gammon Ham, Beef Salami, Chorizo Iberico and Prosciutto with Swiss Cheese and Tomato Bread (S$42).
The tomato bread was soft and sweet, with a slightly tart aftertaste, while the beef salami, smoked gammon ham and chorizo iberico came in generously thick slices and its saltiness went really well with the mild nut-like sweetness of the swiss cheese.
A local bar and eatery, Baba Chews Bar & Eatery also dishes out festive offerings for the season that revolve around Peranakan and Asian flavours, no doubt a playful nod to Katong’s heritage and history.
Debuting this year is Baba Chews Bar & Eatery’s new Iberico Pork Ribs (S$98+).
Glazed with kecap manis, which is an Indonesian sweet sauce, 10 ribs are slow-roasted to lock in the juices and ensure a fork-tender finish. It is served with wedges that are generously sprinkled with spice powder, which makes for a great appetiser or finger food.
Do try its signature Beef Rendang (S$168+). Using U.S. prime beef short ribs, this gigantic 2kg serving of rendang uses a wide variety of spices, coconut milk and gula melaka to create a mouth-watering stew that’s bound to be a huge hit with the family.
Topped with a sprinkling of toasted grated coconut, the beef rendang is served together with Hainanese rice and home-pickled achar on the side.
For those looking to feast like royalty this Christmas, One Farrer Hotel‘s selling not just one roast, but three delicious roasts, so you’ll definitely be spoilt for choice.
The ever-popular One Farrer Signature Salt-Encrusted Turkey (S$168) is back again for its third year running!
Marinated with fresh thyme and oregano that are harvested right from the hotel’s very own farm, the 6kg turkey is encased in a homemade salted crust dough, perfect for that wow factor if you want to crack that shell open during dinner.
This year, the hotel is adding a new roast to the menu. Nothing less than decadent, the Roasted Truffle Turkey (S$158) is covered with freshly harvested rosemary and Italian truffle, stuffed with herbed chestnut stuffing and served with roasted seasonal vegetables on the side. Dishing out classic Western fare and Asian favourites from the gorgeous hilltop of Fort Canning, The Salon has its own resplendent line-up of festive offerings to help you celebrate this season of giving.

Marinated overnight in an aromatic blend of fresh lemongrass, turmeric, galangal, cumin and coriander powders, the tender turkey is slow-roasted for hours to achieve a caramelised and charred skin. Moist on the inside and crispy on the outside, each bite of the turkey was sweet and succulent, with a tinge of earthy aftertaste from the spices.
