If you like fish soup, you’re probably familiar with the variety that often comes with evaporated milk. But new kid on the block, Fish Joy that recently opened in Toa Payoh makes their amazingly gao fish soup from nothing but hours of simmering to produce the milky colour of their broth.

The collagen fish soup at Fish Joy is said to be just like the one you can get at Beauty in The Pot, aka biap, but at an affordable S$10, or less.

According to Fish Joy, they simmer their rich collagen broth for 8 hours to achieve the rich umami and full-bodied flavour of their soup. If you’re unfamiliar with collagen broth in fish soup, it may come as a surprise to you, as it can taste quite different from your regular fish soup.

The broth here is made from a mixture of pork, rather than fish bones to really amp up the collagen to the max.

For the fish itself, Fish Joy does not skimp on quality. They have giant pomfret, red grouper, mackerel, as well as fried dory fish. You can choose to go with rice (S$0.50) or thick bee hoon ($S0.50) to accompany your soup, too.

Their best-selling Red Grouper Collagen Fish Soup (S$10) if full of hefty chunks of fresh red grouper, spinach and tofu with seaweed and deep-fried egg floss as garnish. According to diners, Fish Joy is really generous with their portions too, so you really get bang for your buck.

Apart from their famed collagen fish soup, Fish Joy also sells other dishes like their Chinese Pomfret in Teochew Style (With Bones) (S$15 for small, S$20 for big). The steamed fish dish is comforting and comes with a clear, flavourful broth— the perfect accompaniment to white rice. The Chicken Wings (S$3 for 2 pieces) that’s really har cheong gai at Fish Joy also seems to be quite popular.

For something slightly different from regular fish soup, Fish Joy at Toa Payoh Lorong 1 has got your back. And they might just give biap a run for their money.
