There was a time where soufflé pancakes took over our Instagram stories with their iconic jiggle. We had our fair share of the hype with our local cafés plating up the same ones we see in Japan.
We’ll soon be getting the real deal with Gram Café & Pancakes’ opening in June at VivoCity. Hailing from Osaka, they are supposedly the pioneers of the original soufflé pancake.

They do serve up regular flat pancakes with toppings of sweet or savoury options like fresh strawberries and scrambled eggs. But it’s really quite the quivering tower of their Premium Pancakes (S$11.60) that draws the crowd.

Precariously stacked upon one another, the leaning tower of pancakes requires a long prepping time of about 30 minutes. It’s really quite a meticulous process, from whipping the egg whites to steam-cooking, flipping and stacking them on the plate.
That said, each café outlet serves up to only 20 plates per seating at 11am, 3pm and 6pm each day.
Each Premium Pancakes plate is served with a trio of the fluffy pancakes atop one another, dusted with icing sugar and a scoop of butter. There is also a small jug of maple syrup, quite mandatory for any pancake dish.
Perhaps we won’t be seeing extensively long queues like A&W and Shake Shack in our newly opened Jewel Changi due to its limited availability, but there’ll probably be a long wait for each slot no doubt.
