Huevos: Spec-taco-ular Mexican food including colourful Nachos, Tacos and Quesadillas

If I could only eat one cuisine for the rest of my life, I’d definitely pick Mexican. These vibrant, creative eats are full of texture and flavour, and one of the most popular Mexican eateries in Singapore is Huevos

Located along the bustling streets of North Bridge Road, Huevos has gained a rather large following online, with many people touting it as the best Mexican food in Singapore.

When I visited Huevos on a weekday afternoon, I was greeted by a cosy space with hand-painted murals along the walls. Due to the small size of the restaurant, I would recommend visiting after lunch hour, as many customers filled the space quite quickly.

As someone who worked part-time in a Mexican eatery for three months, I declare myself as an unofficial Mexican food aficionado, and hence, I decided to pay Huevos a visit to see (or taste) if it really lived up to the hype. 

What I tried at Huevos

The first dish I tried at Huevos was the Loaded Nachos (S$17), a plate of crispy tortilla chips topped with chipotle chicken, cheese, guacamole, pico, chipotle mayo, pickled onions and cojita cheese. 

Huevos made no mistake in naming this dish Loaded Nachos, because true to its name, this plate was generously loaded with tons of ingredients.

This plate of nachos was a treat to devour. The crispy tortilla chips, creamy guacamole, soft pico, chewy chicken, crunchy pickled onions and saucy chipotle mayo made this a texturally exciting dish. It did not hold back in terms of flavour either, with the salty tortilla chips acting as the perfect base for the savoury, spicy and sweet elements of the toppings. 

The chicken meat had a flavourful grilled aroma, and I appreciated how generous Huevos was with the amount of toppings.

The pickled onions were the perfect finish, giving some sweet and sour elements to the entire dish. You truly get the best of all worlds with these Loaded Nachos, and if you ask me, these are a must-try.

Next, I tried Huevos’ soft shell tacos, starting with the Impossible Tacos (S$14 for 2 pieces, S$18 for 3 pieces), which came filled with Impossible chorizo, guacamole, spanish red onions, fried potato, caramelised onions and cojita cheese.

For a moment, I thought that I had been served actual ground beef. The Impossible chorizo tasted identical to meat, with the same chewy texture and slightly earthy taste. I especially loved the addition of the guacamole, which made the taco much creamier. 

If you crave something creamier and lighter on the palate, I’d suggest going for these tacos, as the guacamole gives it a delightful and distinctively softer texture.

Initially, I had asked for no seafood, but the chef at Huevos insisted on letting me try the Baja Tacos (S$11 for 2 pieces, S$15 for 3 pieces), and I’m so glad that I did. Containing fish, tri-veg, mango salsa and chipotle mayo, the Baja Tacos were surprisingly full of flavour. 

The fish itself was incredibly soft and tender without any fishy taste. It was nice and crispy on the outside, and the mango salsa and chipotle mayo added a burst of fruity flavour to the tacos. As someone who typically dislikes fish, I’d totally have the Baja Tacos again in the future.

Next, I had the Birria Beef Tacos (S$12 for 2 pieces, S$16 for 3 pieces). Unlike the previous tacos, which were served in soft tortilla wraps, these taco shells were crunchy and filled with beef short rib, brisket, chorizo, mixed cheese, pico de gallo, and served with a side of dipping soup.

As a lover of all things crunchy, this was definitely my favourite taco of the three. The Birria Beef Tacos were filled generously with meat, and the beef was quite chewy, yet tender and soft enough to bite through easily. 

The strong, meaty taste of the beef meat paired well with the milder, juicier pico de gallo topping.

The dipping soup had a watery, runny consistency, but did not hold back on taste either. It was savoury and slightly salty, bringing out the flavours of the tacos even more.

Finally, I ended my meal with Huevos’ Al Pastor Pork Quesadilla (S$14), which was filled with pork and topped with pine relish and chipotle mayo. Despite having less ingredients than the other dishes, this quesadilla blew me out of the water with its incredible flavours.

The pork had a pleasant charred taste and was so chewy and tender that I initially mistook it for chicken meat. I was impressed at how well cooked the pork was, given how most pork meat I’ve had in the past have been on the tougher side. There was also some cheddar cheese within the quesadilla, which complemented the pork with its strong, sharp taste.

The chipotle mayo was creamy and spiced up the quesadilla. The element that wow-ed me the most, however, was the pine relish, which was made with pineapple cubes that gave the quesadilla a sweet and tangy taste. All the elements of the Al Pastor Pork Quesadilla blended together perfectly and I would most definitely order this at Huevos again.

After trying the food at Huevos, I can certainly see why this quaint restaurant has garnered so much popularity on social media. The dishes aren’t just pleasing to look at, they’re incredibly tasty and rich in a myriad of flavours too. With their truly fantas-taco Mexican dishes, I will definitely return for another Mexican feast in the near future!
