Eggciting news! The future of food has arrived at the Grand Hyatt Singapore. Following their successful launch of Beyond Burger, JUST Inc. is back with JUST Egg.

Don’t be too shell-shocked when you realise this is no ordinary egg sandwich; it is in fact 100% vegan with the egg patty made with mung beans.

As compared to conventional eggs, JUST Egg emits fewer carbon emissions. While this is eggcellent news towards food sustainability and the environment, I wondered how the ‘eggs’ would taste and whether the texture would hold up.

In lieu of World Vegan day on 1 November 2018, Grand Hyatt Singapore seized this opportunity to debut JUST Egg with a food truck experience. I had the chance to be one of the first few in South East Asia to check out this exciting foray in food technology.

The sunny yellow JUST food truck stood in front of the Hyatt Hotel Singapore, with a queue already snaking around the back. With a  JUST Egg Sandwich in hand, I was sceptical — being a bona fide egg lover, how would mung bean eggs taste? Bland and rubbery?

To my surprise and absolute delight, the sandwich was downright tasty. The pillowy brioche bun (dairy free too) with the tart homemade tomato chutney and smooth guacamole paired nicely with the JUST Egg patty.

What’s more, the egg patty mimics the texture and taste of an egg perfectly and I am not yolk-ing around. They do taste a lot lighter than conventional eggs, which is great if you are looking for an alternative.

Don’t worry if you missed out on the food truck, Grand Hyatt Singapore is adding the JUST Egg Sandwich to their ala carte menu for lunch and dinner with a choice of sides for S$18++ at their restaurant, Oasis from 5 November 2018.
