Lao Liang Pork Trotter Jelly & Shark Meat 老两 will close on 31 Oct 2026. Located at Berseh Food Centre, this legendary stall is closing after 45 years of serving a rare Teochew dish, Pork Trotter Jelly, and becoming a core memory in the hearts and minds of locals.

Let’s look back at their long history. Their story began in the 1960s, when a 10-year-old Yu Zhongrong was helping his father and grandfather serve pork trotter jelly and shark meat. The very same dish he would continue to serve to this very day. Even before that, Yu Zhongrong’s grandfather served this dish in a Teochew restaurant in China.

For those who have yet to taste their famous pork trotters, the dish itself takes at least 10 hours to prepare. This allows the meat to get meltingly tender. The fat eventually renders and is absorbed into the meat, amplifying the taste even further. It is then chilled overnight, causing the meat and collagen to take on a bouncy, satisfying texture. Served with their housemade chilli and ginger sauce, it balances the dish to something both rich and bright.

You may be wondering, why would he and his wife wish to close in the first place. After 45 years of nonstop service, the labour-intensive and time-consuming preparation of the dish has certainly taken a toll on them. There is the exhaustion, the mental strain of handling overwhelming amounts of orders, and other difficulties that go on behind the scenes. Taking all of these things into account, it’s impressive they managed to last all these years.

As Lao Liang Pork Trotter Jelly & Shark Meat 老两 is the last bastion of this rare Teochew dish, this closure will truly be a sad moment for foodies here. So while they’re still here, have a taste one last time. I hope that they enjoy their much-deserved retirement. Their storied service at Berseh Food Centre will not be forgotten — they have already cemented their legacy in the annals of food history.
