Michelin-starred Chef Mirko Febbrile hosting hawker pop-up with handmade pasta from $7 and soft-serve Burrata Ice Cream

Mirko Febbrile, ex-chef at Michelin-starred Braci, will be hosting a hawker pop-up from 17 August to 17 September 2022.

The hawker pop-up will be located at Chinatown Complex within the stall Nudedles.4, which is run by Clarence Chooi, who used to work at several Michelin-starred establishments like Jaan by Kirk Westaway and the now-defunct Joel Robuchon.

The aim of Chef Mirko’s hawker pop-up is to showcase his authenticity, inclusivity and warmth, ahead of of his new restaurant openings in 2023. There will be fresh pasta handmade in stall with premium ingredients from Italy, with four different pasta dishes and a sweet dessert to top it all off.

Four different noodles are used for the four pasta dishes: linguine, cavatelli, rigatoni and pappardelle.

Linguine al Pesto (S$7) is the usual flat pasta noodle doused in delicious pesto sauce. Ricotta and Tomato Cavatelli (S$8) has interesting shaped noodles that is said to resemble hot dog buns, which is covered in Ricotta cheese and tomato sauce, adding creaminess to the tartness of the tomato.

Rigatoni alla Carbonara (S$9) has tube-shaped pasta noodles that look like straws and is topped with cheese and bacon bits. This will definitely be an upgraded version of your typical carbonara.

Pappardelle Oxtail Ragu (S$10) has broad and flat pasta noodles, almost resembling lasagna pieces, and has a deep rich beefy flavour.

To end on a sweet and savoury note, Chef Mirko has specially crafted a recipe for his pop-up – Soft Serve Burrata Ice-Cream (S$5). This is definitely a unique ice cream combination that I can’t wait to try.

As a self-proclaimed pasta lover, Chef Mirko Febbrile’s hawker pop-up is definitely a must-go. With four restaurant standard pastas for S$10 or below, the quality one gets will definitely be a bang for your buck.
