Brunch Up in the SKAI - Amalfi Coast

Wish you had this view? The 2023 Brunch Up in the SKAI, now in its second instalment, will bring you close. Partnering with Malfy Gin and Perrier, SKAI will transport you to Italy’s beautiful Amalfi Coast for a sweet, sweet afternoon.

Brunch Up in the SKAI at Swissôtel The Stamford will take place from 11am to 3pm on 29 Jul 2023, and you can expect a Mediterranean feast by SKAI Executive Chef Seumas Smith.

The dishes are purposefully crafted to complement the green, herbaceous notes of Malfy Gin, and you can look forward to a host of exciting drinks.

The selection of fresh seafood and cold plates is truly impressive. There is a Seafood Tower that’s packed with ultra-fresh seafood like mussels, oysters, and lobster salad. Cold plates like the Parma Ham with charentais melon and espelette are sure to tickle your taste buds with their salty-sweet flavour combination.

For made-to-order dishes, the standouts are the Sea Bass with sauce vierge and the Saffron Risotto with aged Parmesan.

Who can forget the desserts and drinks at Brunch in the SKAI? There are both alcoholic and non-alcoholic dessert options to cover all bases. The Malfy Gin Fruity Rose and Matcha Yuzu Lychee Gateaux sound very appealing.

For a refreshing cocktail option, the SKAI FIZZ that’s made from Malfy Gin con Limone (lemon), Lillet Blanc, curaçao, lemon citrus, and Perrier sparkling mineral water is the perfect choice. The notes of citrus, honey, and tropical fruits in the drink and will put anyone in a good mood.

In my humble opinion, the O Sole Mio or “My Sunshine” sounds divine. The combination of Malfy Gin con arancia (orange), honey, lavender, and orange citrus bitters is like joy in a glass, befitting its name! For those that don’t drink, the V Plano that’s made from a medley of strawberry shrub, lime citrus and Perrier would be perfect.

The menu is priced at S$198 per person for free-flow cocktails and Henriot Brut NV, and S$218 per person with free-flow cocktails with Moet and Chandon Rosé.
