Super Loco Robertson Quay goes green with carbon-conscious menu & offers opportunity to adopt a tree

If you’ve read my appraisal for Super Loco Customs House’s seasonal menu, you’ll know that Super Loco is officially in my list of favourite Mexican spots in Singapore. I cannot understand why it took me so long to discover their clean, fresh flavours and fun, boozy cocktails. Nevertheless, their latest venture to support a plant-based lifestyle has had them refreshing their menu to include carbon-conscious bites that will satisfy even the most carnivorous appetites.

Mother Earth Salad at Super Loco

Piloting this menu is Super Loco Robertson Quay since 1 April 2021 and my weekday lunch started off with a jumbo portion of Mother Earth Ensalada (S$16). I don’t get easily swayed by salads, but this one turned out to be my favourite dish of all. It’s packed with kale, radicchio, quinoa, mushroom, pumpkin, spiced cauliflower, pomegranate, avocado, pepitas, and chipotle agave, so this will suit you well if you’re looking for a one-bowl meal.

One glance and you might assume it to taste “green” or splashed with a sweet vinaigrette, but in reality, this salad is savoury and toothsome enough for me to pack the leftovers home as dinner. I especially enjoyed the sweet burst of pomegranate seeds littered throughout, serving as a surprise in every forkful.

Cactus Frito at Super Loco Robertson Quay

“Have you ever had cactus before?”, our server politely inquires, as the Cactus Frito (S$9) is placed before us. A soft corn tortilla wrap is piled into a small mound of fried BBQ cactus, agave, cauliflower, passionfruit & chia, serrano chilli, and avocado, making this a beauty to behold. The texture of cactus is likened to aloe vera we’re told, and he’s certainly spot on. Do I favour it, though? It certainly takes some getting used to and I found myself getting bored of it after two bites.

I comment that it could do without the cauliflower as it only distracted me with its overt crunchiness, lessening my appreciation of the cactus.

Surprisingly I really took to the Roast Pumpkin and Corn Enchilada (S$22) more than my dining partner, especially with the sublime combination of mole verdea & roja and lime & cashew salsa. Many enchiladas I’ve had tend to offer too much cream or too much grease, so this one was a reinvigorating shift in how enchiladas can be just as delicious even when served vegetarian and gluten-free.

Mango & Coconut Rice Pudding

For a chocoholic like myself, it’s hard to convince me to other anything else from the dessert menu. However, I’m willing to compromise on my order with the Mango & Coconut Rice Pudding (S$12) here at Super Loco. I almost feel selfish in wanting to have this for myself, with this reminding me so fondly of mango sticky rice.

Here the dessert is created luxuriously with warm Mexican horchata rice, mango, coconut, puffed rice, blueberries, and agave to create a sweet creamy ending that will leave you wishing for a larger portion.

I think I closed the lunch by saying, “If all vegetarian food tasted this good, I might consider the lifestyle!” Even if you’re not ready to jump onto the vegetarian wagon, you can still do your part with Super Loco’s initiative that allows diners to adopt a tree in Borneo for just S$6.

  1. While dining in at Super Loco Robertson Quay, you can view the carbon footprint of each dish on their new carbon-conscious menu.
  2. Adopt a tree to negate the environmental impact of your meal—The Loco Group will match every tree adopted by planting a new tree.
  3. View your adopted tree’s progress with a unique QR code that contains information about your tree’s location, date, and time of planting and background information on the local farmer in charge of caring for your tree.
