When we think of Japanese noodle-based dishes, you’d most probably think of ramen and its different broth variations such as tonkotsu, shoyu and miso. Newly-opened Japanese restaurant Keitaku Mazesoba however, specialises in the not commonly known noodle dish, mazesoba. It first opened on 10 Feb 2023 and is located at Marina Square.

For the uninitiated, mazesoba is a Japanese dry noodle dish. This brothless noodle dish typically consists of wheat noodles, soy sauce, aroma oil, green onions and shredded nori (seaweed). Despite being a Japanese dish, it is believed to be inspired by a Taiwanese recipe back in the 1950s and is sometimes called Taiwanese mazesoba in Japan.

Keitaku Mazesoba offers a wide variety of mazesoba to choose from. Pork lovers will be delighted to note that their signature mazesoba consists of minced pork. Some of the options include Keitaku Signature Minced Pork Mazesoba (S$13.90), Signature Minced Pork with Dried Truffle Paste Mazesoba (S$15.90) and Signature Minced Pork with Dried Shrimp Paste Mazesoba (S$15.90).
You can even opt for a more local tasting mazesoba with options like Charsiew with Spicy Sauce Mazesoba (S$14.90), Cheese & Curry Sauce with Charsiew Mazesoba (S$17.90) and Mala Tofu with Minced Pork Mazesoba (S$15.90).

If noodles aren’t your thing, Keitaku Mazesoba has rice dishes too, such as Signature Minced Meat with Dried Shrimp Paste Donburi (S$15.90), Unagi Teriyaki Donburi (S$18.90), Chicken Teriyaki Donburi (S$13.90) and Salmon Mentaiyaki Donburi (S$14.90).
Complete your meal with an additional order of sides such as Spicy Shoyu Gyoza (S$7.90), Chicken Drumlets (S$2.90) and Yakitori (S$3.90). This is definitely a good alternative to your typical bak chor mee.
