In addition to the traditional Christmas turkey, Chef Eric has also masterfully created six unique festive dishes for Orange Clove, all bearing an Asian flair to reflect culinary vibrancy of our cosmopolitan city.

Cajun Style Oven Baked Snapper Loin With Romesco Sauce

I can’t resist a perfectly baked succulent piece of premium fish fillet, and this Cajun Style Oven Baked Snapper Loin with Romesco Sauce does just the trick for me. The Cajun seasoning gives it a robust rub of aromatic spices with a tease of chilli spiciness, paired with a rustic tangy Catalonian Romesco sauce specially handcrafted by Chef Eric with toasted walnuts, ripe tomatoes and smoked paprika. I know I’ll be returning to the buffet table again for this irresistibly alluring dish.

Trilogy Of Brussel Sprouts, Yellow Zucchini, Carrot With Homemade Thai Inspired

You can’t forget veggies to balance out this indulgent meal, the Trilogy of Brussel Sprouts, Yellow Zucchini, Carrot with Homemade Thai Inspired Peanut Sauce brings something healthy and unique to the table.

The nutty sauce is like a cross between two Thai curries, red and massaman, with the latter’s peanut element of fragrance adding an earthiness to the colourful veggiesCloser to our hearts, it reminds us of an extended version of our local gado gado.

If you want to kick off the buffet with a refreshing change, why not go for Chef Eric’s Special Vietnamese Jackfruit Salad with Poached Prawns. Chef Eric, who has resided and worked in 25 cities and 40 communities, slices up the tropical sweet and succulent jackfruit, and tosses them with crunchy prawns, mint and laksa leaves.

The tangy dressing, made with palm sugar and Vietnamese fish sauce harmonizes and come together beautifully. Just what I need to whet my appetite.

Cold Salad Of Roasted Pumpkin With Wasabi Crabmeat, Toasted Kernels, Coral Gree

Another eye-catching starter by Chef Eric is the Cold Salad of Roasted Pumpkin with Wasabi Crabmeat, Toasted Kernels, Coral Greens & Yellow Frisse. This rich, golden squash is delicately roasted, to bring out its residual sweetness, to a lightly caramelized point, served chilled as a background for tossed crabmeat with wasabi mayonnaise.

The sprinkle of toasted pumpkin seeds adds on to the contrasting textures of the entire dish. Wow, I never thought that pumpkins could be elevated in this way.

Rosemary & Smoked Paprika Baked Chicken With Double Mustard Cream Sauce

Not forgetting our friends who love chicken, the Rosemary & Smoked Paprika Baked Chicken with Double Mustard Cream Sauce promises to delight in every bite. Juicy Mediterranean-inspired grilled chicken slices are paired with
a creamy reduction with two kinds of mustards, Smooth Dijon and wholegrain mustards. Both mustards perk up the creamy sauce to complement the vibrant smoky grilled chicken making this such a robust dish, not to be missed.

Long Grain Spanish Inspired Baked Rice With Sausages & Trio Of Bell Peppers

We Singaporeans can’t live without carbs at every meal, so the Long Grain Spanish Inspired Baked Rice with Sausages & Trio Of Bell Peppers will complete the hearty feast. The sausages add a dimension of Xmas Charcutierie
