Savour New French Dishes From Celebrity Chef Justin Quek + Poulet Collab Now Available In SG

Always wanted to taste celebrity chef Justin Quek‘s creations but haven’t had the time or budget to do so? You’re in luck, because he recently collaborated with French rotisserie chicken chain Poulet to bring us three new dishes!

It’s not his first collaboration; previously, the famous celebrity chef has teamed up with Xian Wang Hong Kong Cafe to release three new dishes as well.

A Singaporean chef famed for his speciality in French fine dining, Chef Justin Quek has several restaurants under his belt, including Chinoiserie which serves modern Asian-Franco cuisine.

Let’s take a look at the dishes he’s come up with. The En Papillotes Baked Seabass (S$15.90++) is a seabass fillet steam-baked au jus together with white wine in baking paper.

Drizzling the fish with lemon beurre blanc (white butter) sauce added a creamy and velvety texture. The mellow tanginess also cut through the fishiness. Adding lemon slices brightened the sweetness, making each bite refreshing.

Cooked for around 15 – 20 minutes, the fish was flaky, sweet and juicy.

The Rossini Angus Beef Steak (S$28.90++) was topped with pan-seared foie gras. With a thin crust on the outside and a rich buttery texture within, this meaty morsel melted easily in my mouth.

Unfortunately, the beef was slightly dry even though it was done medium-rare. Pouring red wine sauce over the dish enhanced the beef’s gamey flavour and made it more palatable.

For dessert, we had the Crème Chantilly Bitter Chocolate Tart (S$8.90++). The sinful mix of bitter and sweet chocolate cream was rich yet airy, and the brittle biscuit crust provided a crunch to every bite.

A dollop of freshly-whipped vanilla cream on the side reduced the bitterness, while the tart strawberries gives an extra kick of sourness.


I thoroughly enjoyed the different dimensions of flavours from these complex dishes by Chef Justin Quek. If you are coming as a group, I recommend getting all of the dishes to share.

These creations will only be available for a limited period of time, and you can get them at all Poulet outlets.
