Simple Ribena Berry Popsicle Recipe: Because The Weather’s Been Berry Hot Lately

Ever dress up all nice and fancy, or take a long cold shower, and then step out of the house to find yourself DRENCHED in sweat in mere minutes? Well lately, we’ve been experiencing that far too often, no thanks to the insanely hot weather of course.

To combat the heat and to provide our bodies (and yours) some semblance of comfort, we’ve come up with the idea of creating Ribena Berry Popsicles—sweet, easy to make, and will perk you right back up from your heat-exhausted shrivelled soul.

Ahhhh, Ribena: the sweet magical nectar of our childhood. There has been a misconception that Ribena’s unhealthy, but it’s actually made with 100% Blackcurrants from New Zealand, with no artificial flavouring, sweetener nor colouring, and they are rich in Vitamin C. So, fear not, you don’t have to hold back on your daily dose of Ribena anymore!

Normally, you’d just add water to Ribena Cordial to make a glass of Ribena, but let’s kick it up a notch, shall we? We’re making Ribena popsicle with strawberries and blueberries for added anti-oxidants and fibre to make your perfect “Summer” treat.

Here’s how you can triumph over the crazy Singapore weather:

Step 1: Prepare the Necessary Ingredients and Kitchen Tools

  • Set of 4 Popsicle Moulds (we got ours from Daiso)
  • 2 Large Strawberries (Halved)
  • 16 Blueberries
  • 240ml Water
  • 60ml Ribena Cordial

Step 2: Fill Moulds with Berries

We placed one large strawberry halve and four blueberries into each popsicle mould, but of course, you could always tweak the amounts in accordance to your love for berries.

Step 3: Mix Ribena Cordial with Water

Add 60ml of Ribena Cordial to 240ml of water and mix well.

Your popsicle moulds might differ from ours in sizes and volume, so simply add Ribena Cordial to the water in a ratio of one is to four. Also, if you feel that our recipe might be too sweet or not sweet enough, you could adjust the amount of Ribena Cordial added according to your personal preference.

Step 4: Pour Mixture into Popsicle Moulds

Make sure not to fill the moulds to the brim as you have to make space for popsicle sticks, and also to allow room for expansion as the mixture freezes.

Step 5: Insert Popsicle Sticks into Moulds

You might have to stab through your berries, but that’s alright it actually helps to stabilise the sticks, especially if you’re using ice cream sticks instead of popsicle sticks.

Step 6: Freeze

Pop them into the freezer for at least four hours, and voila! You’ve got your very own summer refreshment to help you survive in the heat—it is especially perfect for a lazy Sunday afternoon. While slurping up your Ribena Berry Popsicle, you get to enjoy the nice juicy crunch of frozen strawberries and blueberries that introduce a wonderful tartness, balancing the sweetness of the Ribena mix.

Ribena also carries the “Less Sweet” option if you’re looking to cut down on your sugar intake. If you’re seeking to be slightly more experimental, they also come in a “Strawberry & Blackcurrant” flavour to try out.
