With most meat or seafood items, all premium parts available in limited quantities are sold at the highest prices. Salmon by Hinoyama breaks that trend. It is a new hawker stall in Golden Mile Food Centre offering salmon belly miso soup at a relatively affordable price.

The most prized part of a salmon is its belly. Known for its rich, fatty flavour and the most satisfying milky texture, salmon belly slices are best eaten sashimi style. Or at least that was what I thought.
Another interesting point about this contemporary fish soup is the use of miso in its broth. Most well-known fish soup hawker stalls boast either a light and clear or heavy milky colour in their soup base. However, the addition of Japanese miso (fermented soybean paste) introduces a savoury flavour that many love.

Only 3 main items are available at this store. The most basic option is the Fish Miso Soup (S$7.80). Thick slices of salmon are cooked till tender and fall apart upon each bite. Based on the menu images, the cream-coloured broth also contains enoki mushrooms, fresh leafy vegetables and corn bits.

Based on my general observations, I reckon the Fish Head Miso Soup (S$6.80) would be a popular option for older customers. Loaded with collagen, fish head is a popular seafood item that appeals to the older crowd. Unfortunately, I find the process of picking out the flesh between fish head bones tedious and am unable to appreciate the part fully.
The last and most premium fish soup is their Fish and Belly Miso Soup (S$12.80). Although the most pricey item on their menu, I hear of them selling out by early dinner time. After all, who would be able to resist thick salmon belly slices?
Similar to other hawker stalls selling fish soup, customers are required to top up S$1 for a serving of rice. Otherwise, I am certain noodle fans would pick the Inaniwa Thin Udon (S$2) to submerge in the hearty soup!
