What to order at Seorae Jib

Since the Sethlui’s Recommended Menu Pork & Beef Set features a 20% off, it’s available for just S$118++ (U.P. S$146.40++). This meat-centric combo features a total of 770g of pork and beef cuts. Let’s dive straight into the premium cuts of meat you can look forward to grilling.

Now, for the special cut that I’d mentioned earlier — the 100 Knife Cuts Kkot Samgyeobsal (flower pork belly). SEORAE JIB specially imports premium, air-flown chilled pork all the way from Canada to ensure top-notch quality — because its customers deserve nothing but the best!

Yes, the chef intricately scores hundreds of tiny cuts along and across the grain of the pork belly. This method not only causes the meat to curl and tenderises the fat, but it also maximises the surface area for charring. In fact, the way it’s cut makes it look like an exact replica of sotong

The team at SEORAE JIB isn’t kidding when they mentioned that there will be more than 100 cuts. In fact, if it’s less than the promised amount when you order the Sethlui’s Recommended Menu Pork & Beef Set, you’ll receive a Kimchi Jeon (worth S$19.90) or Haemul Pajeon (S$24.90) on the house (not applicable for lunch set)!

When the meat grills and sizzles on the charcoal griddle, the staff rotates and rolls up the meat to ensure that both sides are cooked equally, resembling a blooming flower. Unlike regular samgyeobsal, this sizzles up in no time.

From the very first bite, I was officially a fan. Crisp on the outside, juicy on the inside, the pork belly somehow managed to stay soft, with a texture more exciting than your usual cut. It was totally unique and impossible to ignore.

The special set also features 3 other meat cuts: Yangnyeom LA Galbi, Nuruk Moksal, and Galmaegisal.

The Yangnyeom LA Galbi or marinated US prime bone-in short ribs didn’t disappoint. It had a multi-dimensional flavour profile, tender and delightfully beefy in taste.

Next up, the Nuruk Moksal (pork collar) is served with king oyster mushrooms and Korean chilli peppers. The meat is marinated in nuruk, a traditional Korean aging starter used to make drinks like makgeolli. Served thick, the entire surface of the meat is well-seared before it gets cut into bite sized pieces.

The pork was wonderfully moist and tender, with a subtle tangy, almost umami-like hint of flavour. On the side was myeolchi jeot, an anchovy-based dip that packed a savoury, umami kick with a comforting fermented soybean note that kept me going back for more.

Lastly, the Galmaegisal is a pork skirt that has been marinated and hand massaged for 30 minutes to soften the meat and to allow the flavours to be absorbed fully.

Even with minimal fat, the pork stayed juicy, and when teamed up with smoky grilled kimchi, it turned every ssam wrap into a little flavour bomb. If you think this set was just a meat parade… surprise! SEORAE JIB backs it up with sides that make every bite even more exciting.

seorae jib x sethlui - japchae

Enjoy a plate of Japchae with chewy Korean rice noodles that are stir-fried with aromatic sesame oil, pork, beef, and fresh veggies like spinach, capsicum, and carrots.

seorae jib x sethlui - cheesy egg

If you love cheese and eggs, the Cheesy Gyeran Jjim delivers both in a single, delightfully gooey and hearty bite.

To take your meal up a notch, you can also opt for a piping-hot bowl of Kimchi, Sundubu, or Doenjang Jjigae for just S$10 with purchase of the Sethlui Recommended Set only.

Served in a tray like a luxurious bento, this set comes with kimchi jjim, seaweed soup, and 3 types of banchan.
