New in town: Tamagood — MasterChef winner Derek Cheong opens Japanese stall in Singapore Polytechnic

You’ve probably heard of Derek Cheong, the engineering student-turned-chef who won MasterChef Singapore Season 2. Since his victory in 2021, the 26-year-old has left school to pursue cooking full-time.

He has ventured into various culinary arenas from fine dining to entrepreneurship to even opening his own hawker stall. His latest brainchild is Tamagood, a Japanese rice bowl stall.

Tamagood opened last week on 16 Feb and is located in Singapore Polytechnic’s Koufu Food Court.

The stall specialises in modern Japanese-style rice bowls and baked rice, and aims to keep these delicious rice bowls wallet-friendly and convenient for SP students and its patrons in general.

Tamagood - Onsen Egg Sauce

The stall’s name is an adorable combination of the words ‘Tamago‘ (meaning ‘egg’ in Japanese) and ‘good’.

If you’re wondering where the egg element comes into play, Tamagood uses a special onsen egg sauce in their rice bowls. The sauce is composed of a 63°C sous vide egg in an umami house-made tare sauce.

Each rice bowl set comes with the Original onsen egg sauce and you can get an a la carte serving for S$1 also. The sauce also comes in Truffle (S$1.50) and Mala Cream (S$1.50) variations.

Their range of delectable rice bowls includes the Grilled Chicken Rice Bowl (S$5.50) and the Grilled Salmon Rice Bowl (S$6).

The meats are flame-grilled and glazed in a miso teriyaki sauce, then served with rice, furikake and the onsen egg sauce.

Tamagood also serves up interesting baked rice dishes including the Black Truffle Carbonara Baked Rice (S$6) and Bulgogi Baked Rice (S$6.50).

These come topped plentifully with ingredients and mozzarella cheese, and are likewise meant to be paired with the onsen egg sauce.
