This Christmas, The Beast Southern Kitchen + Bourbon Bar, Singapore’s first bourbon bar, has joined forces with iconic Maker’s Mark Whisky to bring you a scrumptious Christmas menu that is as tasty as it is comforting.
If you didn’t know, The Beast, along Bugis, is where you can find a taste of American Southern cooking, or soul food, as it is more affectionately known. Soul food is just another name for comfort food, so think shatteringly crispy fried chicken with waffles or slow-cooked ribs that just fall off the bone.
To turn it up a notch, The Beast has incorporated the smooth, full-flavoured bourbon from Maker’s Mark Whisky for a truly unforgettable Christmas. Marker’s Mark Whisky is made with soft red winter wheat for a gentler and sweeter taste. Not only that, the whisky is aged in American White Oak barrels that have been charred to open the pores in the wood to further caramelise the natural wood sugars.
We’ll begin with something that reminds me of summer, the Maker’s Mark Glazed Bacon With Pickled Watermelon (S$13).
A glorious and sticky slab of steak-cut bacon christened with perfect cubes of watermelon showered with arugula sprigs for good measure. It’s hard not to like any kind of bacon but when it’s tender to a fault like this and paired with sweet pickled watermelon—you’ll love it. The contrast between sweet and savoury is a common theme in this Christmas menu and something you’ll appreciate as well.
A dish to follow the bacon would have to be St. Louis Maker’s Mark Glazed Pork Ribs (S$24). These ribs are ones you wouldn’t mind getting your hands dirty for, slow-roasted for four hours and marinated with a house-made BBQ sauce and glazed with Maker’s Mark; these ribs mean business.
With deep caramelly notes from the bourbon and a savoury glaze, you’ll be licking your fingers clean. A serving of sweet, chunky sweet potato fries and you wouldn’t want for anything more.
A classic Southern dish that has already made waves here is the Chicken & Waffles with Maker’s Mark Maple Butter Sauce (S$20). Most places either place too much emphasis on getting the waffle right and neglecting the chicken or vice versa—The Beast gets both inexplicably right. A thick succulent chicken with thick fluffy waffles, this is worth the calories.
As if it couldn’t get any better, drizzle your waffles with a maple butter sauce spiked with Maker’s Mark. That wobbly yolk is just the cherry on top of this classic Southern dish.
When it comes to Christmas dinner, you know we’re all here for the dessert, and The Beast knows this. The Banana Foster With Maker’s Mark Flambé (S$13) is everything you would want in a dessert and the best way to end your meal.
You get a little show with this one as well. Watch the flames lick the edges of caramelised bananas and walnuts as the creamy vanilla bean ice cream oozes to the edges of the cornbread underneath. You won’t want to share this one.
It’s not Christmas without the customary swing of eggnog and you’ll want a sip of Maker’s Christmas Eggnog (S$16). Unlike most eggnogs, this one comes sans raw egg yolks. While I’m a stickler for tradition, I much prefer this rendition and The Beast has managed to recreate that same creaminess and richness with a splash of Maker’s Mark bourbon of course.
Dusted with cinnamon for extra Christmassy vibes, this was incredibly smooth and delicious. A little too delicious I might add, winks.
Christmas might feel a little different this year but don’t let that stop you from enjoying all the goodies Christmas promises. The Christmas menu is available from 25 November to 31 December 2020 at The Beast, so ‘tis the season for feasting.
