Yakitori fans, mark your calendars! The highly popular Tokyo yakitori restaurant Torimitsu (鳥光) is making its Singapore debut this Oct with an exclusive collaboration with Tanuki Raw at Orchard Central. Torimitsu will be taking over for 3 whole months with reservations starting from 28 Oct. With just 15 seats available per session, I’d book my table quickly!

Tucked away in Tokyo’s historic Ushigome-Kagurazaka neighbourhood, the original Torimitsu is an intimate, 13-seat eatery helmed by Chef-owner Takuhei Yamada. Since its opening in 2022, the restaurant has built a reputation around Chef’s bold and unique approach to traditional skewer grilling.

Unlike standard yakitori joints that serve small and delicate bites, Chef Yamada is famous for his generous skewer portions, and his signature technique involving close-range, high-heat grilling over a combination of charcoal and wood fire.
Interestingly, he adds pesticide-free grapevine branches to the fire as well, which he explains imparts a subtle fragrance, especially to cuts with more robust flavours, such as offal or tare-glazed chicken.

Chef Yamada’s cooking philosophy centres around washoku, traditional Japanese cooking focused on fresh, seasonal ingredients and simple preparations to enhance the natural flavours of the produce.
Previous menus featured dishes like whole quail wrapped and steamed in fragrant shell ginger leaves — drawing from traditional Okinawan culinary practices — alongside a Japanese herb-infused interpretation of Southeast Asian larb.
