
Plenty of cafes have been popping up all over Singapore lately, but SIXBYSERA isn’t just another cafe that serves coffee and the standard pastries.

The 25 seater cafe at Rangoon Road is opened by Seraphina Poh, a pastry and baking student who originally started cooking for six people, thus the name. In order to set herself apart from the other competitors, SIXBYSERA offers interesting pastries such as, the Milo Dinosaur Croissant, as well as a number of savoury donuts that aren’t listed on the menu.

Starting with the donuts, I tried the Cheeseburger Donut, Bacon Donut and Smoked Salmon Donut ($2.90 each). The Cheeseburger Donut had a nice kick of heat from the jalapenos, and I was pleasantly surprised when I cut into the donut to reveal a filling of stringy mozzarella cheese.
I felt that the bacon slices atop the Bacon Donut could have been a little crisper, but the saltiness balanced out nicely against the mozzarella cheese. My favourite was the Smoked Salmon Donut, which had the inclusion of truffle oil that really elevated the donut by adding a nice earthiness to the taste of the smoked salmon and dill.

If that hasn’t filled up your stomach, try the Chilli Crab Sauce ($11.90, weekend special); a recipe from Seraphina’s grandmother that replaces the usual man tou (buns) with croissant to soak up the gravy. There was a good level of spice, but once the egg yolks were mixed in, the heat was reduced and the sweetness came forth.
The croissants were flaky, but make sure to eat them immediately or they’ll get soggy while sitting in the chilli crab sauce for too long. I was a little disappointed that there was no crab meat in the sauce, but at least SIXBYSERA had the taste of the sauce down pat.

Onto the desserts! I had the Cheesecake Croissant ($6.60) which was delicious, with a buttery croissant and a smooth, sweet cheese filling topped off with super crumbly biscuit bits that melted in my mouth.
I found out that all the pastries and food served are prepared in-house, including the croissants, resulting in a consistently flaky and airy texture.

I had high hopes for the Milo Dinosaur Croissant ($5.90), and I was certainly pleased when it came to the table, a croissant topped with white chocolate nuggets and a good amount of Milo powder that would have made Nathan Hartono proud.
This was definitely a dessert on the sweeter side with the Milo cream, powder and white chocolate nuggets all combined together, but I felt that the dessert tasted a little more chocolatey than a Milo drink would.

If you’re particular with your coffees, you’ll be glad to know that SIXBYSERA gets the coffee beans from Common Man Coffee Roasters, and I was really satisfied with the Latte ($4.90). It wasn’t too milky, and the flavour of the blend was still present; low acidity with hints of floral peeking through, and a cocoa undertone.

I really enjoyed my time at SIXBYSERA, which had a nice, calming ambiance and the pastries were all delicious. Seraphina told me that other donut flavours are currently being developed, including a sushi donut, so I’ll definitely be back for that!
