There is no better recipe than one that comes together in mere minutes, and it is these Spicy Garlic Noodles. A viral TikTok recipe inspired me and you know some of the best content is on that app, albeit the endless scrolling. This noodle recipe takes its cue from Szechuan noodles, where it’s spicy, tangy, and garlicky. It’s the absolute perfect combination and makes use of stuff you already have in your kitchen.

The only thing I urge you to do is get the thickest and chewiest noodles you can find—the wider the noodle, the better the mouthfeel and slurp-worthy goodness. I got these knife-cut noodles that did the job pretty well.

Ingredients

  • 1 packet thick white noodles
  • 1 tbsp chilli flakes (Thai chilli flakes would be the best, otherwise if you have some gochugaru, that would work too)
  • 3 cloves garlic, minced
  • 2 tbsp black vinegar
  • 2 tbsp soy sauce
  • 5 tbsp neutral oil, such as sunflower oil or canola oil
  • Optional: 2 tbsp chopped coriander (or as much as desired)
  • Optional: 2 tbsp chopped scallion (or as much as desired)
  • Optional: 1 tsp sesame seeds

  • Frying pan
  • Saucepan
  • Bowl

Recipe preparation

Cooking time: 10 minutes
Feeds 1

  • Place your minced garlic, scallion, soya sauce, vinegar, chilli flakes, and sesame seeds in a bowl.
  • Prepare a saucepan of boiling water and cook your noodles to preferred doneness.
  • Heat your oil in the frying pan.
  • Once the oil is shimmering, carefully pour the oil into your boil. Expect some bubbling and crackling.
  • Stir to combine.
  • Toss your cooked noodles and garnish with coriander.
