Singapore’s 1st samgyetang specialty place opens in town

If you like Korean cuisine, then samgyetang should be familiar to you. The dish is a soup made with a whole young chicken that’s often stuffed with garlic, rice, jujube and ginseng. It’s considered a summer health food. Seeing as Singapore is basically summer 365 days a year, MODU opening its doors as the island’s first samgyetang specialty restaurant seems very fitting.

MODU is located on the 2nd floor of the Mandarin Gallery, the same level as the founders’ other restaurant, DRIM Korean Steakhouse. The restaurant is done up with wood, craggy rock-like wall features and neutral earth tones with plenty of mood lighting.

The kitchen is also open concept, allowing diners to observe the chefs at work.

MODU’s menu focuses primarily around samgyetang, but there are other dishes in case you’re in the mood for something else, such as Dak KalGukSu (S$32), which is chicken noodle soup, DakJuk (S$25) which is Korean-style chicken porridge and Seafood NooRoongJiTang (S$32).

Begin your meal with appetisers such as Tofu SamHap (S$18), which has grilled tofu with fish roe, braised cabbage and gamtae (dried seaweed).

Another interesting side is HwangTaeChae (S$20), a crispy and airy snack made with dried pollock strips and served with soy sauce mayonnaise.

MODU’s rendition of Korean Potato Pancakes (S$18 for 3 pieces) sees them presented as bite-sized morsels similar to rosti, topped with grated parmesan and caramelised onion and served with truffle mayo.

For the main attraction, there are several variations of samgyetang for diners to choose from. 

The Beauty Samgyetang (S$37) contains herbal ingredients specially sourced from Korea such as goji berries, houttuynia cordata and saururus chinensis that provides additional health benefits. Despite the name, you don’t have to be hungover to enjoy the Spicy Hangover Samgyetang (S$37). This variant features the goodness of samgyetang but with a punchy, spicy soup that will wake you right up.

Perilla Seed Samgyetang (S$38) is a creamy and smooth rendition with a milky soup base made from perilla seeds. Black Chicken Samgyetang (S$37) is made with premium black chicken, known for its leaner meat, denser texture and higher nutritional content when compared to regular chicken.
