Yunnan mixian is the concept of Doway Chicken Soup Noodles, located at Former Savoy Theatre in Boon Lay. This new stall is jointly opened by Ting Ting, a housewife with 2 kids, and her native Chinese husband, Qingquan, an ex-chef with mala tang and BBQ fish experience.

The couple have been married for 8 years and this is their very first food stall. “We’re still at an age where we are physically fit, so if not now, when?” Ting Ting commented.

The menu offers an assortment of 6 soup bases for customers to choose from: 番茄 Tomato (S$4.50), 金汤 Golden (S$4.50), 酸菜 Sauerkraut (S$5.50), 三鲜 Three Fresh (S$5.50), 麻辣 Mala (S$5.50), and 虾汤 Prawn (S$5.50).

Boiled painstakingly for 8 hours, the main soup base is brewed with fresh pork and chicken, and 1 big old hen. The Sauerkraut is sour and refreshing, and is suitable for people who are prone to stomach pain, indigestion and loss of appetite (honestly didn’t know that!).

The sweet and sour Tomato is rich in nutrition, and suitable for people of all ages. The sour and spicy Golden is mixed with pumpkin, carrots and pickled peppers to obtain a striking yellow-orange hue.

Suitable for pregnant women, the elderly and children, the Three Fresh is a clear soup that’s not only rich and delicious, but is also great for regulating the stomach. For true-blue fans of seafood, the Prawn, that’s made from fresh shrimp, is umami-rich and has the natural sweetness.

All soups not only come with a choice of rice, yellow noodles, thick bee hoon, or mixian, but also quail eggs, shredded kelp, shredded tofu skin, Shanghai greens, and shredded tofu skin. Meat lovers, don’t panic just yet! There’s also sliced chicken or pork belly sukiyaki, that comes at no extra cost.

If you’d like to treat yourself, opt for additional ingredients like Beef Sukiyaki (+S$0.50), Prawn (+S$2 for 3 pieces) or Dory Fish (+S$1.50).
