Gyu San Charcoal Bar serves perfect A5 wagyu hamburg and skewers at Orchard Road

Gyu San Japanese Sando and Charcoal Bar opens as the third outlet of popular Japanese brand Gyu San. Located in the heart of Orchard, this outlet specialises in melt-in-your-mouth A5 wagyu hamburgers. A myriad of skewers featuring charcoal-grilled vegetables and A5 wagyu are also available.

The brand first opened in Tanjong Pagar and got customers’ attention focused on their iconic Japanese wagyu katsu sandos. In the Forum at Orchard Road, the same cosy sando concept bar lies adjacent to the sleek and moody Charcoal Bar.

Diners revel in the excitement of watching their wagyu delights being cooked a la minute. With the prized binchotan grill taking centre stage, the sight of the chef whipping up multiple dishes is almost like watching a performance.

We were first presented with the Gyu San Hamburg Set (S$23.80). Expect the most tender and juicy hamburger— they were almost too soft for my chopsticks to hold up. The set comes with a Green Salad and unlimited South Uonuma Koshihikari rice and Miso Soup.

Speckled with finely cut onion and other seasoning, the oval-shaped beef patties bore a charred flavour on the exterior with an explosion of beef juices awaiting on the inside.

It’s recommended that you pair your beef patties with Japanese rice and an Onsen Egg (S$2.50). I did, and thoroughly enjoyed the textures and combination of flavours. Spice lovers, top your rice and egg mixture with their house-made Green Sambal. With the addition of lemongrass to the local chilli sambal, the fragrant and tangy dipping sauce elevated the beefy flavours of the wagyu

There are 7 other condiments to choose from, ranging from traditional Japanese Shio Lemon to South American-inspired Chimichurri, offering multiple flavours to enhance the dining experience. The former was refreshing and introduced a subtle tangy flavour to the grilled items.

Oh, slow eaters do not need to worry— every diner gets a personal mini grill is to keep  your food warm. This means that you can pile on the skewer orders and enjoy your beef patties at your own pace.

Personal favourites include the sweet-glazed Kabocha (S$3.50) and meat-wrapped Enoki (S$3.50). Do note that the picture only shows the tasting sample; their regular serving is larger.

With an intimate dining ambience, and well-executed charcoal grilled mains and light bites at affordable prices, I am certain that Gyu San Charcoal Bar will be seeing a larger crowd as word gets out. Quickly head down to experience it for yourselves!
