We know pao fan has been the talk of town for a while now, but Chilli Api Catering Group has put their (delicious) spin on the rice-and-broth heavy dish to bring us the gift of the ingenious concoction—Laksa Pao Fan (S$68) that frankly makes me wonder why it wasn’t a thing much sooner.
Though it is with beaten-down spirits and heavy hearts that we’re trying our best to celebrate National Day this year, some things just don’t change for Singaporeans, and that is the fact that good food is almost always mood-booster. In true Singaporean fashion, we all love some good heat and a sucker-punch of flavours—both of which are celebrated in this never-before-seen fusion dish.
Expect a bed of steamed white rice, whole prawns, battered fish fillets, pacific clams, and seafood bean curd rolls simmered in Chilli Padi’s special house-made lemak laksa broth, topped with daun kesum (Vietnamese coriander), egg floss, and the signature rice puffs.
